(Wang y Jiao, 2000). Tambin muestra
capacidad antioxidante en fase lipdica para in-
hibir la oxidacin del metil linoleato (MeLo)
(Khknen et al. 2001) y de las LDL (Heinonen
et al. 1998b).
Para el concentrado de zarzamora la AAT
fue de 2142 mol de Eq. Trolox/L y 625 mmol
de Eq. Fe (II)/L, destacando por ser la muestra
con menor capacidad. Segn Moyer et al. (2002)
en la zarzamora la capacidad antioxidante osci-
la entre 714 y 971 mmol de Eq. Fe (II)/Kg
para distintas especies del gnero Rubus, y en-
tre 406 y 1061 mmol de Eq. Fe (II)/Kg para
especies hbridas de este mismo gnero. En este
caso la AAT valorada por estos autores es ma-
yor que la encontrada en nuestras muestras, aun-
que este hecho puede estar ligado a la gran va-
riabilidad que se observa cuando se evala esta
caracterstica en las distintas materias vegeta-
les. Al igual que se ha descrito para los otros
concentrados de frutas rojas, la actividad an-
tioxidante de esta materia se basa en la inhibi-
cin de la oxidacin (Heinonen et al., 1998b) y
en la capacidad de secuestrar radicales libres y
especies reactivas de oxgeno (Wang et al.,1996;
Amakura et al., 2000; Wang y Lin, 2000; Wang
y Jiao, 2000).
La AAT de los distintos zumos concentra-
dos se ha visto correlacionada con el contenido
en compuestos fenlicos y concretamente con
el contenido en antocianos, tanto para las deter-
minaciones obtenidas con el mtodo ABTS como
para las del ensayo FRAP. As se observ una
correlacin positiva y significativa (p<001) con
los siguientes valores para los coeficientes de
correlacin: Para el mtodo ABTS y contenido
en antocianos r=090 y para los resultados del
ensayo del FRAP y el contenido en antocianos
r=097.
CONCLUSIN
En general, la concentracin de los distintos
compuestos fenlicos y la actividad antioxidan-
te total en los concentrados de frutas estudiados
son superiores a los datos reportados para la
fruta fresca o para confituras, lo cual es debido
al procesado tecnolgico de concentracin y a
la reduccin porcentual del contenido en agua
en el producto con respecto a la fruta de partida.
Estos concentrados de frutas rojas podran ser
materias primas adecuadas para la elaboracin
de alimentos funcionales ricos en antioxidantes
naturales, cuyo consumo a largo plazo pudiera
tener efectos preventivos frente a enfermedades
relacionadas con el estrs oxidativo. No obstan-
te, sern necesarios ms estudios acerca de las
propiedades antioxidantes de productos elabo-
rados con estas materias primas y los efectos de
su ingesta sobre las defensas antioxidantes del
consumidor.
