4 eggs
1/4 cup margarne
1 cup whte sugar
1/2 cup four
1/4 teaspoon sat
1/2 teaspoon bakng powder
2 cups mk or haf and haf

Pace a ngredents n bender at one tme and bend unt
mxed together. Pour nto a buttered 10-nch pepan. Bake n a
350 degree oven for 1 hour. When done, crust w be on bottom,

Crust:
1-1/4 cups chocoate wafer crumbs (about 18 wafers)
2 tbsp. sugar
3 tbsp. meted butter or margarne
Fng:
2 (250 g or 8-oz) packages cream cheese
1 (125 g or 4-oz) package cream cheese
1 cup sugar
1/4 cup cocoa
2 tsp. vana
1 cup whppng cream
3 medum eggs
1 (19-oz.) can cherry pe fng
2 tbsp. chocoate cherry queur (optona)
2 tbsp. sugar
1/2 tsp. vana
1/4 oz. grated sem-sweet chocoate
Combne chocoate wafer crumbs, 2 tbsp. sugar and meted butter.
Press nto bottom of 9 nch sprng form pan. Bake n moderate
oven, 350 degrees, for 10 mnutes. Coo. Reduce oven temperature
to 300 degrees.
Have cream cheese at room temperature. Beat n arge mxng bow
at medum speed unt creamy. Graduay beat n the one cup of
sugar and cocoa. Add vana. Beat n eggs, one at a tme. Beat
unt smooth. Pour over chocoate crust. Bake n sow oven, 300

from oven and coo to room temperature.

severa hours before servng.
Decorate wth grated chocoate. Makes 10 to 12 servngs. Ths

Crust:
1-1/2 cups graham cracker crumbs
1/2 cup butter or margarne, meted
1/4 cup sugar
Fng:
2 (250 g) pack cream cheese at room temperature
1 (125 g) pack cream cheese at room temperature
1 cup sugar
4 medum eggs
1 (14 oz.) can pumpkn (no spces added)
2-1/2 tsp. gnger
1 tbsp. cnnamon
1/2 tsp. nutmeg
1/4 tsp. coves
1/3 cup brandy
whpped cream
preserved gnger
For crust, combne crumbs, sugar and butter n a bow and mx
we. Press crumb mxture frmy nto bottom of 10 nch sprng
form pan and 2 nches up sdes. Bake n moderate oven, 350
degrees for 10 mnutes.
For fng beat together cream cheese and sugar unt ght and
fuffy. Add eggs, one at a tme, beatng we after each
addton unt smooth and creamy. Add pumpkn, gnger, cnnamon,
nutmeg, coves and brandy and mx unt we bended. Pour
cheese mxture nto crust and bake n sow oven, 325 degrees,
for 50 or 60 mnutes, or unt we rsen. Turn off heat and et
cheesecake coo n oven. When cod, decorate top wth whpped
cream and sced gnger.

SICILIAN RICOTTA CHEESECAKE
Sponge cake:
Butter
3 egg yoks
1/2 cup sugar
Fney chopped rnd of 1/2 emon
1 cup a-purpose four
1 tsp. bakng powder
3 egg whtes
Fng:
1-1/2 cup sugar
1-1/2 b. fresh rcotta cheese
1 b. mxed canded frut
1/8 tsp. ground cnnamon
3 1-oz. squares sem-sweet chocoate, chopped n peces
8 tbsp. Maraschno queur
To make the sponge cake:
Preheat the oven to 375 degrees. Butter a 10 nch sprng-form
cake pan.
Whsk the eggs yoks wth the sugar, grated emon rnd and 3
tbsp. hot water unt ght and foamy.
Sft the four and bakng powder together, and fod t nto the
egg yok mxture.
Whsk the egg whtes unt stff, but not dry. Wth a arge
spoon, fod them nto the cake mxture.
Pour the mxture nto the prepared cake pan and bake for 15 to
20 mnutes, or unt the cake s a rch goden coor and sprngs
back when pressed ghty. Turn out and coo on a wre rack.
For the fng:
Dssove the sugar n 3 tbsp. of water over ow heat. Beat the
sugar syrup wth the rcotta cheese unt t s smoothy
bended. Put asde about haf of the best peces of canded
frut to decorate the cake. Chop the remander coarsey.
Add the cnnamon to the sweetened rcotta and beat unt smooth

and creamy. Put asde a few tbsp. of the mxture for decoraton.
Combne the remander wth the chopped frut and chocoate.
Cut the sponge cake n haf horzontay. Put one ayer on the
bottom of the cake pan, cut sde up, and sprnke t wth haf
of the Maraschno. Spread wth the remanng cheese mxture. Ft
the rng of the cake pan n poston and ch the cake for
severa hours.
When ready to serve, remove the cake from the pan and pace t
on a arge, fat servng dsh. Coat the top and sdes wth the
reserved cheese and decorate wth the reserved canded frut.
You may aso decorate the cake wth whpped cream, and the
canded fruts may be suppemented wth chopped nuts.
