fudge has cooed, pour over ce cream. Sprnke wth at east 1 cup of Spansh peanuts. Freeze.

for 50 or 60 mnutes, or unt we rsen. Turn off heat and et

Sponge cake:
Butter
3 egg yoks
1/2 cup sugar
Fney chopped rnd of 1/2 emon
1 cup a-purpose four
1 tsp. bakng powder
3 egg whtes
Fng:
1-1/2 cup sugar
1-1/2 b. fresh rcotta cheese
1 b. mxed canded frut
1/8 tsp. ground cnnamon
3 1-oz. squares sem-sweet chocoate, chopped n peces
8 tbsp. Maraschno queur
To make the sponge cake:
Preheat the oven to 375 degrees. Butter a 10 nch sprng-form
cake pan.
Whsk the eggs yoks wth the sugar, grated emon rnd and 3
tbsp. hot water unt ght and foamy.
Sft the four and bakng powder together, and fod t nto the
egg yok mxture.
Whsk the egg whtes unt stff, but not dry. Wth a arge
spoon, fod them nto the cake mxture.
Pour the mxture nto the prepared cake pan and bake for 15 to
20 mnutes, or unt the cake s a rch goden coor and sprngs
back when pressed ghty. Turn out and coo on a wre rack.
For the fng:
Dssove the sugar n 3 tbsp. of water over ow heat. Beat the
sugar syrup wth the rcotta cheese unt t s smoothy
bended. Put asde about haf of the best peces of canded
frut to decorate the cake. Chop the remander coarsey.
Add the cnnamon to the sweetened rcotta and beat unt smooth

Combne the remander wth the chopped frut and chocoate.
Cut the sponge cake n haf horzontay. Put one ayer on the
bottom of the cake pan, cut sde up, and sprnke t wth haf
of the Maraschno. Spread wth the remanng cheese mxture. Ft
the rng of the cake pan n poston and ch the cake for
severa hours.
When ready to serve, remove the cake from the pan and pace t
on a arge, fat servng dsh. Coat the top and sdes wth the
reserved cheese and decorate wth the reserved canded frut.
You may aso decorate the cake wth whpped cream, and the
canded fruts may be suppemented wth chopped nuts.
