In contrast with still wines, a wine is sparkling when it has a concentration CO2 gas which is enough to give it, at the moment of the opening of the bottle, a definite effervescence guise bubbles and a fine scum. There many ways to have a sparkling wine. The most used of the mis the traditional method. In a first time, we turn to wine a still wine. After a time of breeding chosen by the winemaker, the wine is bottled with yeasts and a dose of sugar sealed up by a metallic cap. Sugar will change in alcohol and will produce some Co2 at the moment of a new fermentation. And this gas creates the effervescence of the product.
