When choosing a wine for a particular dish, try to match the primary flavor components of the wine with those of the dish. Here are some dry table wines commonly used for cooking and their typical flavor contributions: Chardonnay: green apple, butter, butterscotch, vanilla Sauvignon Blanc: herbal, vegetal, citrus Pinot Noir: mushroom, red cherry, truffle Merlot: blackberry, cocoa Zinfandel: jam, blackberry, black pepper Cabernet: cassis, black currant Another factor to consider when cooking with wine is the timing of the addition of the wine. The earlier the wine is added in the cooking process, the more alcohol will be evaporated. But there are cases when the alcohol is desired in the recipe. A splash of wine added near the end of the process will retain nearly all of its alcohol content. If youre thinking of using fortified wines like genuine Sherry, Port, Madeira and Marsala wines, be aware that they contain elevated alcohol levels to begin with. Most will retain a good amount of their sweetness, although some can be fully dry. Wine will boil at a lower temperature than water, around 175 degrees versus 212 degrees. So, if you substitute wine for water in a recipe, remember adjust the cooking time to compensate for the lower boiling temperature.

Who says you cant have the best of both winemaking worlds, classically styled releases, and wines which walk on the wild side? If youre Napa Cellars Winemaker Joe Shirley, you absolutely get to have both and the results are fantastic wines in an environment designed for their enjoyment rather than pretension. In other words, stop between the towns on Highway 29 for the best times and wines! The story of todays Napa Cellars really begins with Joe, who was born in Long Beach but raised in Napa. He was initially set on a pre-med sports medicine track at Occidental College back down in Los Angeles, but a barbeque at UC Davis professor Maynard Amerines (yes, that Amerine!) house changed all that: Joe returned to Northern Californian and received an MS in Enology from UCD. After graduation, he worked for Sonoma Cutrer before moving on to Trinchero Winery, initally as enologist, but then named winemaker in short order. When the Trincheros wanted to take Napa Cellars to the next level, Joe was the natural choice since he puts emphasis on the vineyards, with decisions about them driving eveything else: I spend a lot of time in the vineyards making harvest decisions. I find that every hour spent at harvest has way more impact than an hour spent in the cellar in the winter. With Joe at the helm, Napa Cellarss philosophy is to put a modern polish on classic Napa Valley wines as the folks at the winery like to say, these are delicious wines that possess all the character youve come to expect from Napa but with an attitude and price youll find rather refreshing. The goal is pure varietal expression from the wines the Valley is most known for without any of the negatives sometimes associated with other producers: classic, artistic and

Smoky Sweet Pork Tenderloin Paired with Baldacci Family Vineyards 2011 Elizabeth Pinot Noir
We love barbecue and I am always looking for new recipes for grilling but we also need a substantial wine that can hold up to the intensity of grilled meats and the 2011 Baldacci Family Vineyards Elizabeth Pinot Noir is the ideal wine. This Smoky Sweet Pork Tenderloin recipe is from Fran Leach, Direct Sales Manager at Baldacci Vineyards and pairs beautifully with this big bold vintage. Pinot Noir tends to be a softer wine with very delicate flavors. The Elizabeth on the other hand, is a fuller bodied, darker colored Pinot that Cabernet lovers will really appreciate. This recipe couldnt be easier to make in terms of barbecue and I loved how the red berry characteristics in the wine brought out the richness of the pork. Pinot Noir is a great wine because over time, summer whites can become dull and its a bit lighter and more refreshing than a Cabernet while still offering the complexity of flavors making it a great food pairing wine. The 2011 Elizabeth Pinot Noir continues the Baldacci Familys tradition of rich, fruit forward wine from their estate vineyard in Carneros. The wine has aromas of strawberry, juicy pomegranate, cherry cola and mouth-watering flavors of red raspberries, plums, wet stone and hints of fresh mushrooms are carried across the palate by fine oak tannins. While the wine is delicious now, with the balance and structure, it will age well for 3-5 years. One sip and you will not be disappointed and since their wines are only sold at their tasting room or online, its the perfect time to discover this family winery. Baldacci Family Vineyards is located in the famed Stags Leap District in Napa Valley and includes 17 acres of Estate Cabernet Sauvignon grapevines. Their Carneros estate vineyard is planted with the Family Collection varietals of Pinot Noir, Merlot, Syrah, Gewrztraminer and Chardonnay. cup of hot jalapeno jelly 1 teaspoon water 1 tablespoon paprika 1 teaspoons salt 1 teaspoon granulated sugar 1 teaspoon brown sugar 1 teaspoon chili powder 1 teaspoon ground cumin teaspoon freshly ground black pepper 2 (1-pound) pork tenderloins, trimmed Cooking spray cup light ranch dressing cup sweet hickory smoke, tomato based BBQ sauce (such a Bulls Eye) 8 (1 ounce) hamburger buns or Kaiser rolls
DIRECTIONS
Prepare grill to medium-high heat. Combine the water and jelly; set aside. Combine paprika and next 6 ingredients (through pepper); rub evenly over pork. Place pork on grill rack coated with cooking spray; cover and grill 15 minutes turn pork occasionally. Brush pork with jelly mixture and grill an additional 5 minutes or until thermometer registers 155. Place pork on cutting service. Lightly cover with foil and let stand 5-10 minutes. Thinly slice and place on buns, using the ranch and BBQ sauce to top the pork, and serve.

There are interesting stories and fascinating people behind every winery. Of all the characters in wine country, it would be hard to pick one as the most dynamic. But wed venture to say that Judd Finkelstein of Judds Hill Winery and MicroCrush in Napa would be a finalist if such a contest were held. This ukulele-playing, tikiloving, radio-hosting, video-producing vintner sure knows how to keep life interesting in wine country. Born into the winemaking family that founded both Whitehall Lane and Judds Hill wineries, Judd was raised in the Napa Valley and had early exposure to the winemaking process. At his eponymous winery, you may find him tasting barrel samples to assemble a final blend or personally hosting a group for one of his popular Bottle Blending Day Camps. During a BBDC, guests create their own Napa red wine blend to bottle, cork, custom-label and leave with the same day. This seminar was developed as an offshoot of the Judds Hill MicroCrush program, in which customers work with Judds Hill to produce custom wine in lots of one to six barrels. More information on the Blending Camp and MicroCrush programs can be found on the Judds Hill website, www.juddshill.com. Not surprisingly, there is much more to Judd than wine. Throughout his life, hes had the opportunity to pursue interests and develop skills that, at first blush, might not seem to be related to his life as a Napa vintner. For example, in addition to being a wine professional and aficionado, Judd is a big fan of spirits, mixology and classic cocktails. Where most folks would be content to find a favorite bar to visit from time to time, Judd took his passion and founded F .O.A.M., or Friends of Ardent Mixology. This cocktail appreciation guild meets regularly to sample artisanal spirits and hear presentations by top spirit industry guests. Occasionally, field trips are taken to distilleries and other mixology-related facilities (e.g., bars!). When Judd isnt working at his winery or planning F .O.A.M. excursions, you may find him producing one of several wine country media shows. Every Tuesday from 9 to 10 a.m. he hosts Judds Napa Valley Show, a radio show broadcast live on Napas KVON (1440AM). The show is all about drinking, eating and having fun in Napa while meeting the personalities and characters that make the wine country special. Those who live outside of Napa Valley can stream it live at kvon.com or download the show as a podcast via iTunes. And, while youre at iTunes, you can also download Judds other show, Wine Booty. Created in 2011, Wine Booty is billed as Napas first ever pirate-themed, wine-centric talk show! so as a former San Francisco Chief Concierge who moved here for the wine and stayed for the river and the trees I continually seek the mostmemorable mix Sonoma County has to offer. Begin your day with the popular, hearty breakfast buffet at the Fountaingrove Inn, and then head to Goat Rock State Beach. This State Park is located where the fresh water Russian River meets the salty Pacific, and a brisk-morning visit to this microcosm of life is a must-do. Then, head east to Guerneville for a leisurely stroll through the magnificent giants that encompass Armstrong Woods State Park, an ancient grove of Coastal Redwoods; this is a do-not-miss multisensory experience. Both parks can be enjoyed throughout the year, even in winter! Now, on to Korbel for a fabulous tour and tasting; dont forget to visit their Marketplace, where youll create a picnic delight youll enjoy later! Of course, I base my winery suggestions on varietals sought by my guests, but always recommend a drive to the vintners of scenic Dry Creek and Russian River Appellations. Among my personal favorites are Bella Vineyards (great reds, rustic cave tour, winery artifacts from around the world), Amista (pet-friendly, worldclass wines); VML Winery (gold medal-winning Pinot), Lambert Bridge (enjoy your picnic lunch amid their beautiful gardens with a glass of their finest!) and the casual Kokomo Winery (to-die for Zin and MOST gracious hospitality!). Afterward, enjoy late-afternoon one-of-a-kind shopping in the Victorian town of Healdsburg; end your day with a delicious dinner at our restaurant, Equus, or at the Michelin-rated, small plates gem Willis Wine Bar. its my favorite! Everyone is different, and with more than 400 wineries in Napa alone, there are enough wineries to please every palette. Personally, I have some that are varietal-specific, others because of great wine and gorgeous grounds (Newton), spectacular caves (Hall Rutherford), or fabulous food and wine pairings (Rams Gate)or all of the above (Quintessa). For a great introductory tour, I still think Mondavis Signature Tour & Tasting is one of the best in the valley! For those thirsty to learn more about wine, there are wineries that conduct blending seminars, allow barrel tasting and, during harvest, even allow guests to actively participate in punch-down. For wine blending, Conn Creek is fabulous and Joseph Phelps is very educational. For barrel tasting, I frequently recommend Alpha Omega, Fontanella, Flora Springs Winery and Del Dotto. For those who claim to have done Napa, sometimes its often a matter of looking beyond Hwy 29 or the Silverado Trail. I love some of the smaller wineries in Coombsville, but am also a big fan of mountain Cabs, and have sent many guests up-valley to Spring Mountain and Howell Mountain. Youd be surprised how many wineries are still not really on the map but have much to offer to the most discerning critics. In Coombsville, I love Tournesol, Palmaz and Caldwell. On Howell Mountain, I love OShaugnessy, Viader and Cade. On Spring Mountain, I love Barnett, Vineyard 7 & 8 and Spring Mountain Winery. One of the most gratifying aspects of my job is when guests come back to tell me how amazing their day was!

As you drive north out of the city of Napa on the Silverado Trail, within thirty seconds, youve left the urban behind, and all around you is simply the sights and smells of wine country. Just before you get to the Soda Canyon Store, past the curve of the Silverado Pet Hospital, look to the right for a small sign with a brilliant yellow mustard flower and pull in. What awaits is one familys vision of how to create a legacy for their kids, and theyre doing it the right way with lots of great wines and relaxing times. Inspired by his familys childhood trips through European wine country, Steve and Suzie Reynolds gave up a dentists life in 1994, purchasing the hundred-year-old, fourteen-acre ranch on the Silverado Trail and devoted themselves to the year-long, byhand transformation of the property: I acted as general contractor and built everything from the fences to the tasting room. Apart from having to live in a friends garage for six months, we can now say it was a labor of love, says Steve. Indeed, the winery, vineyard and tasting room have been created to give the visitor moments of sheer joy at and discovery of one familys passion. Turning off the Trail, surprises await each vistor. To begin with, the Estate is truly a familys residence, with kids running around and all. The tasting room and winery are Tuscan in style, blending into the hills naturally, and are surrounded by acres of Cabernet Sauvignon and a beautiful pond, home to many birds. Most visitors will find that, when they visit, they will be invited to barrel taste or blend their own wine to suit their palate. The goal is to let people into the daily operations of the winery in a relaxed and enjoyable way, where visitors feel part of the winery team as it goes about its tasks. Wine country life is still a pleasant life, tasks and all. When done appreciating what goes into wine production, more than a dozen wines are available to sample, including the whimsical Naughty wines; the Cabernet Sauvignon estate made from the property itself; the Stags Leap reserve with its unique hand-picked, hand-glued, hand-made mustard flower label; Los Carneros Chardonnay and Pinot Noir and their famous Persistence blend. Steve also works with a few partners in the creation of Thirteen, Fourteen and now Fifteen Appellations, a unique meritage blend consisting of one ton of grapes from each of the Valleys fifteen sub-appellations. The Naughty is a fun wine that consists of four different wines priced at very reasonable prices. The tasting room itself has a wonderful Mediterranean vibe, with a spacious terrace facing a pond and lots of light and views in all directions. The goal, in Steves words, is to give the right kind of experience: Were always trying to do the right thing when people visit, to give our guests what we would like if we were the ones visiting the winery. And that they have, which is why people like to hang out on the patio, enjoying the wines, and looking at local birds, flocking to the estate. It doesnt take fancy to make good, and it doesnt take a lot of flash to produce memorable experiences. If you have a few moments, check out the websites quirky videos which showcase Steves growing collection of vintage workhorse farm vehicles and trucks; his love of tequila, tacos and Cabernet; and how the family went about creating and self-producing the individual mustard labels for the Persistence blend. It was 1987 when Jim and Beth Summers bought a vineyard in the Knights Valley region of Napa Valley. At the time it was planted mostly with Merlot and some Muscat Canelli. Today, the winery is surrounded by acres of vines, including the Villa Andriana Vineyard, which is planted with Zinfandel, rare Charbono and the Cabernet Sauvignon grapes that are essential to the signature wine named after the daughter of the proprietors. Called Andrianas Cuvee, this rich and complex wine has been winning awards from the start. The tasting room is housed in a handsome farm-like building. A porch runs the length of the building, with a patio and fountains in the front along with bocce court and picnic tables in the back for visitors to take advantage of pairing picnics with Summers Estate wine. The winemaking facility and crush pad are also onsite. It is what people imagine having their own winery would be like! The tasting room is open 10:30 a.m. to 5:30 p.m. every day. One of the coolest things to do in wine country in the summertime is to head out to Moshin Vineyards Russian River winery on Westside Road and catch a movie! Going to a winery to watch a movie may sound a little odd at first, but since 2006, the folks at Moshin have been presenting films on the crush pad during the summer months, and this years line-up includes two classic films from the 80s, Back to the Future (the first one) on Saturday July 20 and Caddyshack on Saturday, August 10. Admission is $10 per person and includes a bottomless bag of hot popcorn. Wine is available for purchase by the glass or bottle and guests are encouraged to come dressed as one of the films characters, such as Marty McFly, Doc Brown or even Biff Tannen from Back to the Future or Ty Webb, Judge Smails, Lacey Underall or Bill Murrays character Carl Spackler. Coming as one of the VOTED A WINE & SPIRITS 2012 WINERY OF THE YEAR characters makes these films even more fun to watch. Santa Rosas Railroad Square is home to one of the hippest wine bars Ive ever seen. This iconic spot is called Station 1870 and it is home to Lost Canyon Winery (and a few other labels too, all produced by Fritz Winery in Cloverdale). For those who prefer imported wines, there are a handful of delicious Italian wines in the line-up to choose from as well. This place oozes cool vibes. Soft music plays in the background (they offer live music Thursday-Saturday), cozy couches and chairs are strewn around the sitting area, the long bar is outfitted with plenty of comfortable leather barstools, the stained concrete floors echo with the tap, tap, tap of well-shod heels, there are bottles and bottles and bottles of wine everywhere you look and the staff is friendly and informative. Sit down at the bar or on a comfy couch or chair and choose from at least 45 wines, all of which are available by the taste, by the glass or by the bottle (or by the case, should you be so inclined). Pair your wine(s) with a tasty selection of housemade tapas-style treats and let the weight of the world slide from your shoulders. Lost Canyon Winery specializes in single vineyard Chardonnay, Pinot Noir and Syrah, all sourced from some of the best vineyards in the Russian River Valley. I tasted the featured flight of five Lost Canyon Wines and loved every single one, but I simply dont have room here to write about all of them. My two favorite wines were: 2011 Chardonnay, Ruxton Vineyard ($35): One sniff and you know youre in for a classic Chardonnay! Aromas of baked apple, crme brule, buttered toast and vanilla custard are balanced by a bright squeeze of citrus. These aromas continue as flavors in the lusciously textured, yet juicy mouth.

volunteers to the high school each week to assist in both academic and elective classes as well as in the administration office and the College and Career Center. Also, Red and White Ball funds were also shared with the PTO's at each school and the Sonoma Valley High School Boosters Club. Since 1993, the Sonoma Valley Education Foundation has raised over 5 million dollars for the public schools of Sonoma Valley. The purpose of the Sonoma Valley Education Foundation is to fund programs that help the Sonoma Valley Unified School District make sure every student graduates well prepared for college, career and civic responsibility. Among the programs the Foundation currently supports are Exploratorium Science, Visual Thinking Strategies, Preschool for All, The Teacher Support Network, El Sistema Music and the district wide School Garden Program. Taste Our Terroir Expands to Four Delectable Days, July 18-21
Livermore Valleys premiere food and wine affair has expanded from one evening to four delectable days for 2013. The historic wine region will celebrate and educate wine lovers about its unique taste of the land, July 18-21. Over the four days, local wineries will offer more than 20 different events including a food and wine pairing competition, culinary demonstrations, vineyard tours, wine tasting seminars and a five-course varietal dinner featuring 17 Livermore Valley Sauvignon wines. Taste Our Terroir 2013 will begin Thursday night, July 18, from 6 to 9 p.m., with the regions signature event, the annual quest for food and wine pairing excellence. Twenty Livermore Valley winemakers have partnered with Bay Area chefs to compete for honors. Experts David Glancy of the San Francisco Wine School, food writer Ethan Fletcher of Diablo Magazine and Chef Jude Affronti of Sur La Table and Affronti Food + Wine Bar will sample the gourmet pairings in a blind tasting before awarding Most Innovative Pairing, Judges Best Pairing, Best White Wine Pairing and Best Classic Pairing. Guests will have the opportunity to taste all 20 pairings, bid on luxurious silent auction items and cast a vote in the Peoples Choice competition. This popular event will take place at Casa Real in Pleasanton. Tickets are $85 at www.LVwine.org.
