BOURBON WHISKEY
What makes it Bourbon? The place? The grain? Or the water? To be honest, Bourbon doesnt have to come from Bourbon county or even Kentucky. The legal criteria to be called Bourbon is that it comes from the USA, be made from at least 51% corn, aged for a minimum of 2 years in newly charred American white oak barrels and contains no colouring agent or fillers.

COGNAC
Brandy by another name. Cognac is the transformation of a high yielding, lackluster grape, Ugni Blanc, that when distilled, aged in Limousin French oak and given ample time, becomes one of the most seductive and soughtafter spirits in the world. So whats up with all of those abbreviations? VS (Very Superior) undergoes at least 3 years of ageing, V.S.O.P. (Very Superior Old Pale) undergoes at least 5 years of ageing, X.O. (Extra Old) undergoes at least 6 years of ageing but is usually much more. Now you know.

GIN
It is all about the botanicals! Gin started out primarily as a vodka, it is then enhanced with herbs, roots, berries and most importantly juniper, that are either steeped in the spirit or held above the spirit as it distills for a second time. Over the past few years there has been a revival of artisanal small-batch gin producers. Be adventurous and try something new!

RUM
Have a sweet tooth? Rum is produced by distilling sugar cane into a high-proof spirit. After distillation, molasses, caramel, and/or sugar syrup are added back in the spirit for colour, as well as to smoothen the end flavour. Rum can also be aged in oak barrels with multiple vintages being blended together to add complexity.

In the world of spirit-making, some feel Distilling is a science. Blending is an art. Most blended scotches incorporate in excess of twelve different whiskies from around Scotland to create their own signature blend.

To be classified as a Single Malt Scotch, all whisky found in the bottle has to come from the same distillery but can be blended from many casks. The vintage stated on the bottle has to be the youngest whisky present in the blend. The end flavour is greatly influenced by the place in which the whisky is made and where it is aged.

TEQUILA
Tequila is a town, as well as the legal name for a spirit made from the blue agave plant originating from any one of five Mexican states. It is a common misconception that the blue agave plant is part of the cactus family but in fact its genus is from the lily family. The time the tequila spends in American oak barrels determines its classification. Silver or plata tequila has not been aged in oak; Resposado or rested tequila spends three to twelve months in barrel; Aejo or old spends one to four years in barrel.

VODKA
Vodka can be made from any base ingredient(s) as long as it is distilled above 190 proof and then cut with water to 80-110 proof. Common base ingredients are wheat, rye, potatoes and corn. Pick a favourite.
