Subak
The watering and irrigation system in Bali is known as Subak. Subak is an organization of farmers that manages the irrigation system for the rice elds, and this irrigation system can only be found in Bali.

There are four basic elements in each Subak. There are the elds, water sources, irrigation systems, and the cultural and spiritual activities of man and the temple. These four elements are considered the cultural heritage of the ancestors of Bali and they must be preserved and guarded wisely. This irrigation system has been around for hundreds of years now. This irrigation system has been preserved since the 11th century, when it was formed to provide for the common need for water for the rice elds owned by the Balinese farmers. Farmers got together and built tunnels as irrigation

canals that connect the springs to the surrounding elds. In addition, the rivers in Bali are often in such steep places that getting water supplies for the rice elds would be quite difcult. The philosophy of Subak is adopted from the Balinese philosophy of life that is Tri Hita Karana, or three causes of happiness (God, man and nature). Tri Hita Karana is the concept of a harmonious relationship between man and God, man and nature and between humans. With this Subak system, the water management in agricultural elds is

based on the mindset of harmony and togetherness, which is based on formal rules and religious values. So it can be concluded that the activity of Subak is not merely agricultural but also includes social interactions between fellow farmers and the implementation of religious rituals in order to have a successful harvest. In Subak areas, a Hindu temple is built as a dedication to the goddess of prosperity and fertility, Dewi Sri. This water system is governed by an indigenous leader who is also a farmer. Kelian Subak or Pekasehlah (the leader) organizes water management based on the order arranged in egalitarian society. Subak has specicity when compared to the existing irrigation systems in other parts of Indonesia and even the world. Its uniqueness lies in rituals such as ceremonies conducted at an early time starting from land preparation, planting, and nally to harvesting. Until now, Subak has been used by the government for

agricultural development activities such as agricultural research and development. Another thing that distinguishes the Subak irrigation system from the others is that in this system the farmers work together for the benet of each others elds so that everyone has the equal rights to their water supply and they can achieve their common goal, and that is the success of the crops. When the irrigation system is running well, farmers can enjoy the adequacy of the water together. On the other hand, when the irrigation water is very small, they will have limited water together. Similarly, planting schedules are strictly implemented. Planting time is set in a certain time or generally within a span of two weeks. If a farmer violates this agreement there will be sanction imposed. Not just a cultural heritage, Subak has also ofcially become a world heritage, recognized and dened by UNESCO (Nations Educational, Scientic and Cultural United Nations). In September of

2012, a certicate of recognition as a world heritage was received. Through a long process taking almost 12 years, Subak has eventually received the worlds recognition and is a source of pride for the people of Bali. UNESCO recognizes Subak as one landscape, with a cultural value, community organization, and belief system that is unique. With this recognition of the heritage site, it proves how Subak has become an important part of Bali and its society, and especially farmers are expected to promote its welfare. Subak was nominated with the title Bali Subak Culture, which is inspired by the Balinese philosophy of Tri Hita Karana. Subak is not only reected in lush, beautiful landscapes and green elds, but also interlinked to the culture and belief systems. The recognition of the world heritage area covers Jatiluwih Catur Angga Batukaru, Tabanan Regency, Pura Taman Ayun Mengwi Badung Regency, Regional

River Areas (DAS) and the Gianyar Regency Pakerisan Ulundanu Pura Batur and Lake District Bangli. Although this has been recognized worldwide, locally the farmers still face some issues, as farmers are still subject to property tax and some have changed the function of the land into something else considered more protable. Nowadays, Subak farmers are often associated with poverty, underdevelopment and are less prestigious. Agricultural production costs are not comparable with the results because the value of agricultural products in particular are less absorbed by the tourism and industrial sectors. Some areas for Subak farming have been turned into buildings such as hotels. The government data on agriculture records over the trans function of rice elds into buildings in Bali in the last 10 years has reached 2,330 hectares, or an average per year of 233 hectares of the total land area of 81,908 hectares of elds in Bali.

For example, due to the rapid agricultural land conversion, in Denpasar alone it has been recorded that three Subak areas have disappeared. Those three Subak areas were Subak Kreneng, Subak The Stone and Subak Sanglah. Denpasar now only has 36 Subak, also the smallest compared to other districts in Bali. More than 30% are recorded in the Tabanan regency and the remaining 70% are spread across the eight districts / cities in Bali. Besides the taxes, access to capital for the agricultural sector is given less often by the banks. The only incentive for farmers from the government is in the form of seeds and fertilizer subsidies. To get capital for their farms is rather difcult, causing the farmers difculty in maintaining the continuity of producing a quality crop. In reality, farmers local produce can not be accepted well by the market so there must be a mutual agreement that agricultural products can be accepted and still able to be maintained agriculturally in

Bali so that there will be no more Subak land conversions. That way the tourism sector is expected to add extra value to local farmers and be able to thrive in the local market so that the farmers can rely on good crops for them. If farmers do not get the benet who would produce it? The existence of villas and hotels in nearby Subak areas has caused the selling value tax of land to increase sharply. As a result, farmers pay the same tax on Subak as other hotel accommodation services. As taxes get too high many farmers choose to sell their Subak land to investors and the Subak areas will become less and less. It is expected that the government would give special attention towards the implementation of property tax so that they would exempt the Subak area from high tax in order this to keep the Subak area as it was intended to be. Advertising and the celeb-obsessed media have also played a big role in this. The constant barrage of images of beauty, great gures and physiques and healthy glowing smiles, coupled with the highlighting of any slight imperfections in the rich and the famous, have created a picture-perfect world. People now dont just dream of a better body, they expect it. Perfection has become attainable. The result everybody goes to the gym. This trend is also now prevalent in Bali. Like in most things, Bali follows the trends imported from Europe and this is no different if

Balis middle classes, who have grown more afuent, students as well as the big and ever-growing gay scene, are all part of the masses diligently applying themselves in one of the various gyms dotted around. And, with this being Bali, there are choices. There are different types of gyms, each with different attributes and different attractions. First off you have pure workout gyms, like

Hammerhead, one of the oldest and most established gyms in Bali. It rst opened in 2001 and is still going strong, pretty much unchanged from those early days. Beautifully basic and stark, no frills, no dead weight, strictly for serious people, not for showoffs or y-by-nighters. Open-planned and welcoming, and with all the equipment you could wish for, it offers a service that is equalitarian in its beliefs. It is a gym that has many bodybuilders but theyre not the majority and theres a strict no-steroids policy and no audible grunts; they take extra care to make girls feel safe, ensuring an environment where they dont feel intimidated or letched at and that its energetically clean; they also cater to the majority of Balis gay community in a non-homophobic environment, but the management sees to it that there is no awkwardness for the heterosexuals; and last but not least, they are cheaper than most of their competitors and have special rates for locals, in order to make it multi-cultural and inclusive, a gym for the community. Also, partly due to its location, it also attracts all the transient trade. This is where people come to work out, not socialize. Its trainers are more mature than you nd in most gyms, which basically means that they have years of experience. For the various athletes and

actors who take their vacations in Bali, this is where they come to stay t Hugh Jackman and Chris John (boxing world champion) have recently spent time here. Whilst they do have aerobic classes for women, the space is not now we see the other side of the coin - the thing that a lot of people now want, mainly females, is group classes. High-energy workouts, dancing, yoga, Pilates - and whilst Hammerhead does provide this service, it is not their specialty. There are other places for this, and leading this front is 3V (Kerobokan). Originally just a gym to accommodate a new set of villas that had been built, it slowly grew into an all-encompassing club, comprised of a weight gym, a studio for classes, and a spinning room as well as a swimming pool and a restaurant/cafe. It has a country club feel but is a place people use for tness, not coffee-brunches. The onus here is on classes and group tness, and they do it very well. With a selection ranging from TRX, Zumba, Bodypump, and Powerstep, to Yoga, Pilates, and Qi Gong, and following the latest training models including the standardized and structured internationally renowned Les Mills model, they provide the perfect

quite conducive for it, leading to a slightly haphazard schedule, and

service. And it seems theyve cornered the market. If you want aerobic group workouts, 3V is where you go. Their regime also includes outdoor activities such as mountain trekking, running clubs and bike rides, and their reasonably priced 12-month contracts mean that their clientele includes many locals. Mostly women, residents, and those keen to work out. And even though the club provides a wonderfully tranquil space for relaxing and having a bite to eat, people that come here mostly choose not to. They come, they sweat it out, and they leave. This is for people just as serious about their tness as at Hammerhead, but coming from a different angle. And more different still is the 3V branch at Canggu. A warehouse type of space, in two different buildings, it has a unique approach to exercise and its called Parkour. Very different from a gym, this something new, a little radical, and maybe the shape of things to come as it offers a space that aims to replicate an urban environment, with scaffolding, walls, natural obstacles and railings. The idea is to improve your balance, endurance, explosiveness and co-ordination, but within a natural location, and it also offers many things for kids like futsal and gymnastics as well as Muay Thai. But theres another group of people, the slightly older, more well-to-do crowd who look for something a little more rened, a bit more plush, and they have that choice, this is Bali after all. The Canggu Club caters to this crowd and acts as an oasis, a haven from the madness of the streets of Kuta/Seminyak. This is a country club, which just so happens to include a gym. Its expensive and thus exclusive, it has a great restaurant, a large swimming pool with some very relaxing places to lounge, steam rooms, massages, and many activities for kids. The gym is clean, modern, small and compact but has everything you need for your basic toning up. And it also offers regimented grueling workouts with instructors and the use of TRX, the latest innovation to improve core strength. This is a place where you go, have a little workout, a quick dip in the pool, top up the tan on a sun-lounger, then a long soothing

Seminyaks dining scene has exploded in the last few years, with dozens of great new restaurants springing up left and right. The melting pot of residents and visitors has brought an array of sophisticated, tasty cuisine. Its home to some of the islands best spots offering authentic Asian delicacies, Western favorites, and the trend of fusion cuisine that combines Asian, French, Italian and Latin food with sumptuous and pricey results. Attire is usually casual-chic, but patrons who head down to Seminyak like to dress to impress.

arong is one of the restaurants you dont want to miss when you get the chance to dine in Seminyak. The place opened only

the wide array of enticing menu items, the suggested entres were served by the jaunty gentlemen from the kitchen. Chicken and Tuna Betel Leaf, both well thought out and designed, with an eye on prot margins, to be consumed all together in one bite or two. The crunchy betel leaf was enlivened with a healthful small portion of tuna and chicken, fresh at leaf coriander, lime leaf, roasted chilli and capsicum relish. The Tuna was garnished with Balinese Sambal Matah while the chicken seasoned with Red Nam Jihm. Soft Shell Crab Salad followed, served with green mango mint-shallots and crushed peanut, tamarind, and chilli dressing. The crabs were powdered with our and deepfried to a golden brown color crunchy

which comes with three dipping sauces; Indian Salad, fresh green chutney, and Reita Sauce. Its a blending of exotic avours that is very well put together tender and tasty chicken with spicy salad. The list of desserts completes the whole Asian dining experience with Thailand inspired sweet treat Black Sticky Rice with Lychees and Mango Ice Cream, as well as the simple but mouth-watering Deep Fried Bananas with coconut ice cream and Young Coconut Jelly with crushed ice tapioca and black agar-agar. To call it a night I took a sip of one of their most likeable concoctions at the bar

a few years ago but has rapidly gained a great reputation among Asian food fanatics who wish to savour the authentic yet playful dishes of Chef Will Meyricks brilliant creation. He has successfully turned Sarong into one of the most interesting restaurants in the neighbourhood. On my visit to Sarong, I saw customers crowding the restaurant at 6.30 p.m. - they looked

and delicious. It was well combined with the fresh ingredients, giving the perfect so pleased to be enjoying their meals and I overheard them saying, Thank you. The food is fantastic to the friendly waitresses who always ensure that the customers get what they need. My expectations got even bigger when thinking about what an unforgettable Asian dining experience I was going to have here. Sarong is designed in an appropriately dark and moody style its elegant with chocolate-colored walls, a high ceiling, classic table settings, exquisite chandeliers, dim light, brown lace drapes charmingly decorating the pillars, a small pond near the high-chair table sets, and sofas for comfy options. The dining setting is divided into an outdoor area with small lovely garden and a spacious alfresco setting. While perusing multitude of texture and avours, spicy, sour, and tasty in every bite. Once you move into the heavier meal section, Sarong really kicks into gear and things get even better. A waiter arrived with an ample portion of the mostacclaimed aromatic Light Green Curry of Snapper with Thai eggplant, stirred in coconut cream and sweet basil. The tasty warm soup was perfect to scoop up with the Naan bread of which there are three selections of avors on the menu plain, garlic and cheese. The succulent sh absorbs the rich essences of herbs, spices and other ingredients absolutely delightful. From there I was pampered by the authentic Indian cuisine, Chicken Katsoori Kebab marinated in saffron yogurt kasoori methi and green mango salad, Sarong Jl. near the entrance, the Sarong Signature Coconut Passion Fruit and Pineapple Daiquiri and Sarong Swizzle a refreshing mixture of rum, apricot, honey, and house ginger beer. The menu at Sarong truly reects Chef Will Meyricks tribute to the Asian culinary scene. As an Asian food fanatic, I appreciate the heart and soul that the entire team pours into each meal. As I walked in a familiar song welcomed me, Diamonds are a Girls Best Friend sing by the quintessential American sex symbol Marilyn Monroe. Then next American songs from those old times followed doo wop, rocka-billy and pop like Louis Armstrong with La Vie en Rose, the comedian-singer Dean Martin with Dixie Medley and Everybody Loves Somebody Sometimes, the wellknown singer Frank Sinatra, Sammy Davis Jr., The Drifters, Ella Fitzgerald, and Billie Holiday to name a few. The ambience reminds me of a classic-retro American diner where a jukebox is always found in the corner where you have to insert

a coin to play a song. And the owner has successfully revived that vintage feeling, with walls decorated by classicretro signage, photos, advertisements, and movie posters of renowned actors including Sean Connery, Marilyn Monroe, Marlon Brando, and Cary Grant. Walking further in, the wall along the stairs is decorated with wallpaper of vintage newspaper and a mirror covering the opposite side of the wall creates a fun double effect. Memorabilia are stacked attractively on the second oor; an antique 1970 1980 dial style red house telephone, mini gumball machine, classic radio, antique toys. Robot Lilliput the rst robot toy in existence that was originally manufactured in the mid to late 30s, Spaceman from the Space Age era of the

past few years restaurants have emerged to jazz up the highway but only a few survived, while others went bankrupt within less than a year. One welcome and surprising new comer is the Cosmic Diner, a terric vintage American restaurant. The sign is easily visible as you drive north on Sunset Road from Simpang Siur Kuta toward Seminyak, strategically situated in the Sunset Star Arcade, with the name Cosmic Diner spelled out in cheerful red and blue signage on the

of American diner would it be without a steak? The restaurant offers basic steaks make from quality ingredients, such as the Premium Beef Steak 160 grams of Premium Australian Tenderloin served with roasted cherry tomatoes and Caf de Paris Butter. Its a great deal for the price cooked with the exactitude youd expect at an expensive steakhouse, but not necessarily at a place like this at these prices. Another main course from the breakfast list is the Strawberry Wafes two generous portions of wafes topped with fresh strawberries and whipped cream, drenched in icing sugar served with simple syrup. 1950s to 1960s, and few other tin retro robots with the clunky, boxy models of the past retain their nostalgic charm. The Cosmic Diner is a simple restaurant with attention to detail when it comes to the interior design, while the food sticks to the basic American concept featuring burgers, steak, pasta, salads, eggs, pancakes and wafes, bowl of cereal and cup of healthy yogurt. Essentially, it provides well-executed comfort food for a reasonable price. The restaurant is trying to stay with the breakfast-lunch project considering its location in the business complex, although there are no restricted rules for not enjoying your dinner here with a good melted cheese or beef burger. Waiters are brisk and efcient, with warm smiles and zero attitude. They encouraged me to sample The West Coast Burger, consisting of 140 grams of premium Australian Beef. The bun is golden and shiny, not too soft, the beef coarsely ground, juicy and tasty, and cooked to a perfect medium-rare. Crispy bacon, sliced tomato, caramelized onions, fresh lettuce, a slice of cheddar cheese, and fried egg and a smouldering mayonnaise pulls it together, served with fries and small portion of salad. There is Spaghetti Meatballs too, the classic American meal that was rst introduced by the Italian immigrants to New York City in the early 20th- century. The dish is served with homemade premium Australian Beef meatballs, stirred in yummy tomato sauce, Italian herbs and big sliced of Parmesan cheese. Dessert could be a shake like The New Yorker caramel and chocolate milkshake served in a big boot shaped glass. Or else you can opt for some typical American sweet such as a Classic Sundae, Banana Split, Affogato, or Gelato. If you are on a strict diet, staying with a coffee, espresso, tea, or lemonade could be a good option. Okay, Im Argentinean but I have studied and worked in Spain for 10 years. My rst two years of practice was in the restaurant of Martin Berasategui (3 star Michelin restaurant in Lasarte-San Sebastian, Spain). Then I did a year of internship in Seville to San Lucar la Mayor, Spain at the Hotel de Ferran Adria (2 Michelin stars). After that I was four years in the restaurant Tragabuches as the second chef, where we got our rst Michelin star in the period that we opened the rst gastro style tapas bar. Actually I have nothing in particular. I love working with sh and seafood. I like pastas and salad! This is a little bit unusual for an Argentinean who is usually meat-person.

My adventurous soul brought me here, especially my passion for cooking and new experiences waiting. I like this idea and concept of a new way of eating that highlights much interaction with the customer.

What does Tapeo offer and what makes it different from the others?
The difference is that it is a new concept. The food itself has become common and eaten anywhere in the world, not only particularly Spanish cuisine. It brings new ideas and experience, not only the food but its the art of enjoying the food, socializing with friends and groups. Our idea is to cook this with local ingredients that will make something unique for your taste buds. In this gastrobar you can eat tapas, have dinner or lunch at any time casually without having to be so formal like in a fancy restaurant, where tapas is usually served. MAHAGIRI VILLAS:

The Villa
It took me a while to nd this villa. I drove from my place in Seminyak to Sanur, relying on my Google Maps to nd Jalan Pungutan. On the Jalan Ngurah Rai By Pass after reaching the Sanur area I should have found a u-turn, but I missed it and found myself already in Padang Galak. So I turned around and went back, driving carefully trying to nd Jalan Pungutan. I pulled over to ask some local people, but the rst two didnt have a clue where it was, had to nd the next u-turn and go back once again. It turned out that Jalan Pungutan is just a small road. No wonder I didnt nd it, because before I thought it was a large street at an intersection. At rst I was skeptical as I entered the small road that looked like it was going to a local village. Previously I checked their website and the villa looked very luxurious in the photos. Finally I arrived, and from the front yard to the front desk it hadnt reected the word luxury yet, and not until I was nally

your own private beach, and Balian Beach in the west, a surfers delight but also a picture-perfect collection of cute, affordable, and luxurious huts right on the beach. Or you could go inland, up in the mountains and try living in a postcard for a few days, perhaps in Toya Bungkah on the edge of the lake and the crater of Mount Batur the scenery and spectacular countryside is truly awesome. Or spend a few days in one of any number of secluded and often-luxurious hotels tucked away in little corners of the mountains, which tend to offer peace, quiet, and panoramic views. Tulamben, Candi Dasa, Padang Bai - they all offer different and unique underwater experiences as well having their own distinct character on land. Its all out there, waiting to be seen and felt and devoured. So many places with unlimited potential. And dont worry if you think youll be on your own, you wont be hardy travellers, divers,

If you want relaxation, theres any number of beautiful beaches with their own little communities - from Lovina in the north, where the pace is slow and the tourists still mix with the locals like in the old days, and Pemuteran with its light blond sand, great diving, and a calming stillness, to Balangan Beach in the south, a stretch of restaurants and humble accommodations and what is in effect

eclectic tourists, discerning residents, honeymooning couples, like-minded souls, theyre all there, not in droves but in sufcient numbers. And best of all, when you get there, you feel like youre in on a little secret that the rest of the tourist hordes know nothing about. Meanwhile, everyones back in Kuta. What can be done about this? Well, knowledge is power, information is the key, and marketings the tool. If Bali wants more tourists, then show them where to go. More advertising by the tourist board, and the more creative the better push it, put it out there; make the tourists feel like theyre missing out. Perhaps another reason for this disparity is due to the roads maybe better roads and better access to some of these places, especially since the airport is all the way down south rather than in the middle of the island, would see a change. The distances are not that great, they just seem that way when youre stuck behind Miss Daisy on a one lane road whilst youre shaken up and down from the potholes. Spend some money, improve the roads, and make it a smoother ride to paradise. But its also a chicken n egg thing, a Catch 22. If there arent enough guesthouses, bars or restaurants, most people dont want to know. Investment in the more obscure places needs to be encouraged for these places to prosper. But again, advertising is the key. Investment is useless on its own - if restaurants and bars get built but no one promotes the fact, no one will go there (this is what has happened in Amed and Candi Dasa amongst others). However, even if these places stay the same and never attract bigger numbers of people (and this would be my preference), go anyway. Why be part of the crowd? Theres a world of magic out there, the same magic that enticed and entranced the rst travellers to hit these shores many years ago. Thats how Bali became famous. But the landscape has changed, as it was always bound to do. Kuta and Seminyak are ne, great for a western-style holiday. Plenty of sun, beach relaxation, nice dining, and a few cocktails in the evening, before dancing the night away til the early hours. But you can do that anywhere. Bali has more than that. Theres a richness of variety here thats unique, and its itching and needs to be scratched. And someone, somehow, needs to tell the incoming tourist masses. Text by Daniel Leemon

Bali may be popular for a great many things, but what has always been woven into its fabric and almost indistinguishable as a separate entity from everyday life is art. Vibrant, exotic, ubiquitous art.

verywhere you go you are surrounded by it, be it the decorative carvings, the textile paintings and stone sculptures you are incessantly offered on the beach, or the omnipresent bamboo leaf religious offerings. And the countless galleries that seem to line each street.

Whilst the various high street establishments have lots of

worthwhile paintings on display, if you delve a little deeper and get slightly off the beaten track, you can nd something more individualistic, more unique. The Kendra Gallery is the result of an idea hatched by Bruno Wauters to create a place that morphs art with a caf and work, an all-encompassing experience rather than just something to do. This is somewhere where you can go in the morning, sip a cappuccino and have some breakfast, reect on the tranquil setting and gather your thoughts, then go inside and leisurely peruse the exhibits on display. Flick through some of the books on offer, or alternatively have a business meeting in the library, a relaxing space with elegant seating and surrounded by books and exhibits. Tranquil and serene, the perfect place to escape the hustle and bustle of the frenetic streets of Seminyak, this is a secret little oasis

- an open-air courtyard, a beautifully manicured lawn, a moatlike pond with water lilies and golden Koi sh, neat and precise clusters of young bamboo trees as well as Palm and Frangipani trees dotted around, and the bougainvillea owers draped all over the walls. The trickling water cascading down the stone feature into the pond pacies the mood, and quite simply encourages you to savor the ambience. Upon entering the courtyard you are greeted by the sculpture of a man standing on his head, and then the wonderful sight of a shoal of metal sh on sticks occupying the center of the green. Look around and youll see another sculpture, a cute bronze couple

to a child while praising him, and to wish him a better future, this captivating exhibition was comprised of three separate but intertwined elements; Iwan with his carvings, paintings and wooden surrealistic puppets, Ria (his wife) and her collection of glass-covered used wooden boxes containing different objects that she labels dioramachronicles, and then the both of them together as the Papermoon Puppet Theatre and its inimitable performances. Talking to Iwan, an amiable and affable guy, its immediately obvious that the inspiration behind this exhibition is history, or rather the lack of knowledge that his generation have of their own history. He laments the fact that it is not taught or written down in school books, and he sees art as communication, a medium, a language, if you learn how to draw you can then talk. He believes that, as in most societies, its the old people that have to teach the young, and in Indonesia this has traditionally been done through various mediums of art. I wanted to give a surrealistic history lesson for the kids, because people without knowledge are like charcoal. Charcoal is a recurring theme, or rather the fragility of charcoal, and its not as strange a comparison as it sounds at rst. He

sitting on a pair of small bench-seats. Elegant, cute, welcoming. The gallery itself, recently refurbished for a re-launch of sorts, is a double maisonette, open-planned and sunlit with a warm feeling, like being in a friendly artists lounge, chic but not daunting. One thing that a re-launch requires though is a unique exhibition, and a little while ago they did just that. Iwan Effendi and the Papermoon Puppet Theatre is an allencompassing artistic endeavor that is both thought provoking and child-like in its simplicity. And its this simplicity that is the point. Entitled Ngudang, which roughly translates as to speak

mentions todays radicals in Java who are brainwashing kids with more or less the same rhetoric as 40 years ago, and how easy it is to use, and indeed use up a generation in this way when they have no historical perspective. Charcoal is something you can use once and then it disappears this is what happens when you have no understanding of the past. Like the present day youth. If we dont have knowledge then we cant grow as people. Hence his obsession with the stuff. Its the pervasive material of his paintings and carvings - even when he uses healthy wood he burns it to give it a charcoal effect, before carving into it and painting simple colorful faces and other child-like things like bubbles and sky excerpts. These carvings and paintings are, in one case, beautifully combined and intertwined with a painted wall to create a piece that is so much more than the sum of its parts. Rias work is similar to this but more detailed and thematic. Glass-covered wooden boxes containing papier-mache, paper clay and other objects made into dolls tell a story, designed to be

microcosms of the hopes and dreams of ordinary people. These boxes and dolls are tiny, making it necessary for the viewer to peer real close, which then allows you to see the little details which bring them to life. Exquisitely fascinating. Then we move on to the puppets. Aside from the entrancing performance on the opening night (which can be viewed on video in the gallery), these puppets have been used to stunning effect for the piece that dominated this exhibition; a giant whale-shaped bamboo structure suspended in mid-air and resembling a balloon (of hope for the future generations), lled and powered by an old couple manning a wind turbine, and clinging to it, pages from old historical manuscripts, owers and smaller puppets. Awesome in its simplicity. You can still see some of Iwans exhibits at the Kendra, but theres now a lot more besides. The gallerys own collection is also on display and offers even more variety theres the twin work of Agus Suwages painting of blackbirds on a shovel, coupled with Budi Adi Nugrohos sculpted interpretation that sits alongside it, the brilliantly striking sculpture of a life-size bronze man hanging off a gold-plated weight scale by Budi Kustarto, the somber paintings of Filippo Sciascia and a taste of the modern with Arie Dyanto

Journey to BOTI
The rugged green uplands of Timor are chock-full of traditional villages, but Boti stands out as something special. This is a community still ruled over by its own self-styled king, a place that over the generations has kept colonialists and Christian missionaries at bay, still preferring its own age-old adat customs to the modern Indonesian nation state.

he sound of the motorbikes engine faded and I was alone at the end of the rutted red track. Quiet returned in the form of

town of Soe, 110 kilometers east of Kupang, setting out early in the morning in a brightly colored public minibus. The passengers were old men dressed in sarongs of hand-woven ikat cloth. As we wound along a tortuous forest road they had asked where I was going. Boti, I told them, and they nodded ah yes, Boti, of course! and when a heart-stopping view opened from a high ridge, the man sitting beside me pointed

towards a scattering of rooftops on a distant green slope. Boti, he said; there it is The minibus dropped me at the roadside and a young man on a motorbike took me along a rough track through the trees until we reached the stony riverbed, the point beyond which vehicles could not travel. I would have to complete the last part of my journey on foot, and as I was heading for a village famous for having

guarded its traditions more closely than any other community in West Timor, that seemed like the best way to go. I shouldered my backpack, picked my way to the edge of the rushing water, then slipped off my shoes and waded to the far shore Across the riverbed the track reappeared, rising into the forest. Houses with neat gardens and thatched, domeroofed outbuildings appeared beneath the trees. Chickens and bristly black pigs wandered ahead of me along the track. A small boy politely led me to the threshold of what looked like a beautiful half-wild garden the inner compound of Boti where I was to be the guest of the villages royal family.

At the end of a stone paved path stood the kings house, a neat little chalet with a tin roof. Sitting on the wooden veranda were a gaggle of women in ikat skirts. They welcomed me as if they had been expecting me, and in a few minutes a glass of sweet tea and a plate of fried bananas had been placed in front of me. The women, grouped around Mama Tua, the Queen of Boti, talked softly, the beads of their heavy jewelry clicking together as they moved their hands. Guidebooks make much of the fact that very little Indonesian is spoken in Boti. However, village children now attend government schools and while most older people know nothing of the national lingua franca, many villagers including Mama Tua

do speak Indonesian slowly, carefully and precisely, handling the language like the foreign object that it is. Around twenty people live in the inner compound of Boti, while another 70 households beyond its wickerwork fence also closely follow the original adat customs of the village. They are mixed in amongst families who have adopted Indonesian identity and the Protestant religion, but according to Mama Tua a total of 315 souls still follow Botis original ancestor-worshipping faith. After a welcome meal of rice, fresh greens and chickpeas I was very hungry after my uphill walk I wandered along the muddy yellow track above the village. Across the green ridges evening was

falling, pale clouds clinging to the hillsides like smoke, and as I made my way back to Boti in the dusk a cool rain began to fall. The village has received a steady trickle of foreign visitors since the previous king, the father of the current ruler, cannily decided that welcoming low-key tourism would not only provide cash income it would also help to preserve the traditions of his little realm. There is one foreign phenomenon that Boti has welcomed, shrewdly, successfully, and entirely on its own terms and that is tourism. Wellbehaved, culturally respectful visitors, prepared to brave the rough roads to Botis ridge-top fastness, will receive a warm welcome. The guestbook reveals a couple of

hundred separate visits in 2009, and in the green forest garden of the royal compound a simple guesthouse four rooms with wooden beds and ikat blankets has been built. For a donation you can stay the night, and that was what I decided to do, falling asleep to a chorus of frog-song and insect noise, far beyond the reach of roads and electricity. I met the king, who had been absent the previous day, in the coolness of the following morning. Nama Benu, known as Bapa Tua, only took over the role a few years ago after the death of his father, but he is keeping Botis traditions strong. With a gentle, handsome face and his long, frizzy hair tied back in a ponytail Botinese men must wear their hair uncut after marriage he spoke just enough Indonesian to welcome me to the village, but no more. The royal audience over, I wandered through the village. The traditional houses of this part of Timor are roofed with thick thatch, reaching to the ground and pierced

by a low doorway. They are known as ume kbubu, which simply means round house, and are usually used as kitchens. The morning cooking smoke was leaching out through the wet thatch as I walked. There are other traditional buildings in Boti. Lopo are cones of thatch raised over stone platforms used as a meeting place and for storage. The top of the royal lopo in Boti is marked by a carving of three birds. Pah, one of the young men of the village, told me that the Botinese believe that they are descended from people who came from the nearby Lunu mountain and also from the birds. Because of this avian ancestry the hunting of small birds is forbidden in Boti, and the branches are full of song. When they are being hunted in other villages the birds y here to be safe, Pah said. Boti is famous for its ikat, the loomwoven cloth iconic of East Nusa Tenggara. But unlike in other villages where the hard-sell can mar the visits of inquisitive

outsiders, the people of Boti handle the business of selling their work perfectly. When a visitor arrives the community showroom a traditional thatched building is simply left standing discreetly open for anyone who wants to buy one of the beautiful pieces at a very reasonable xed price. With a couple of small lengths of ikat packed in my own bag it was time for me to make my departure from Boti. It was such a beautifully, dreamily peaceful place that I was reluctant to return to Indonesia and the modern world. Pah walked with me to the threshold, pointing out the lower village where many people now follow Christianity. But not us, he said; we follow only what came from before, what has descended. Under the rule of Bapa Tua, and with the benets of tourism to show the value of traditional culture, it seems likely that the next generation of Botinese will continue to do so. Since its opening in July of 2011, Union is one of the most happening 20 bar and restaurant combinations in ba Jakarta. This brasserie, bakery and bar is located strategically in Plaza Senayan, and enjoys a prime location on the ground level with an expansive frontage onto the open external courtyard. The best thing about it is actually its location, with a view of the Plaza Senayan courtyard and lots of natural light coming in from the big windows during the day. As the sun sets, Union opens up their windows to reveal the pleasant view of a small park sandwiched between the tall Senayan ofce buildings, with a dancing water fountain in the middle. As for the interior, the combination of dark wood paneling and furniture, white tiles, some red sofa chairs and vintage pictures hanging on the wall, makes for an elegant retro look. In fact, the interior design draws on the style of the classic early 20th century New York brasseries. The oor space is divided into three sections: the main brasserie dining area,

the bakery counter (which has its own dedicated space and direct entrance from the mall interior), and the bar with adjacent walk-in wine cellar and a station for the DJ turntable. As you reach the bar and seat yourself on a bar stool, you will see the mixologists intensely whipping, shaking, rubbing and stirring all sorts of colorful liquids. This bar is where all the drinks are produced, with some 40 unique cocktail choices from classic cocktails to cocktails with an added twist. Union divides them into three categories. First are the Twisted Classics such as Mango Jalapeno Margarita and Green Tea Whiskey Sour. Second are Signature Cocktails such as Sakura Spring and Trufe Popcorn Martini. Third are the Creamy Cocktails such as Raspberry Cheesecake and Chocolate Buddha. At this point, its clear to see that Union kinda gives an impressive offering of classic cocktails that have been updated with innovative ingredients and techniques.

Take for example the Ogura Cocktail, with muddled red beans, Russian vodka and hazelnut beer, that gets inspiration from a touch of Japanese. This sweet, foamy cocktail with a creamy nish will surely be a favorite choice for the ladies. Or the Aged Negroni, another cocktail with a sense of Africa and presented with a mini wooden container as a unique jar. Besides the bar theres also the wine cellar, which is another point of interest at Union. All the wines are carefully selected to showcase a large variety from all over the world, such as Sauvignon Blanc and Pinot Noir from New Zealand, Cabernet from California, Malbec from Argentina, and many Australian wines. Union is also proud to offer one of the citys largest selections of champagne. Moving on to the food, Union serves a menu of classic bistro European and Asian style dishes with contemporary interpretations and preparations under the direction of Head Chef Adhika Maxi and Head Pastry Chef Karen Carlotta.

For starters, if you are in the mood for a salad, try the Romaine Caesar Salad, which consists of romaine lettuce, chicken, half boiled egg, potato chips and bacon bits with a light mayonnaise dressing. Continuing on to the main course, maybe you will want to choose from the Roast Baby Chicken, Union Burger, Blackened Tasmanian Salmon Belly or Roasted Bone Marrow, which have become the favorites at Union. The Asian dishes include local favorites such as Oxtail Soup, Fried Rice, Bakmie Ayam with Foie Gras, and Nasi Campur. Meanwhile, the bakery section offers selections of daily baked breads and pastries, either for eating at the brasserie tables or as take home items. The Red Velvet Cake from Union is a favorite and famous around Jakarta. The cake is moist, has the right level of sweetness, and yummy with the caramelized nuts adding an earthy avor and crunch. The size of this 4-layer cake is quite big, and thats why its meant to be shared. The

Macaroon is good too, with nice and crunchy texture. The other cakes are also superb, such as the Carrot Cake, Crunchy Chocolate Cake, Banana Cake, and Peanut Butter and Jelly Cake. The food is good, even though maybe quite pricey, but you will appreciate the menu and especially worship the dessert. Because the place is very busy and queues for tables are common most nights, the service might be a bit lacking especially during the more crowded afternoon and evening hours. But still, people will gladly go back to Union for afternoon tea and the Red Velvet Cake, because its a cozy place to catch up with friends and its the place to see and be seen. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctorprescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
