Method

Grind

Recipe

  • 1. Soak soya chunks in very hot water for 10 minutes.

  • 2. Squeeze out from the water, add fresh cold water, drain the water and squeeze well.

  • 3. Repeat the process once again to remove smell from soya. Squeeze well to remove the moisture.

  • 4. Put it in a mixie (using dry grinding blade) and run at a low speed, stirring once or twice to make it like kheema.

  • 5. Chop onion and tomato into small pieces.

  • 6. Grind the ingredients given under to grind as a fine paste.

  • 7. Heat oil in a pan. Add cinnamon, fennel seeds, onion and little salt and fry it till its color changes.

  • 8. Add soya and fry it for 5minutes. Then add ground paste, peas and tomato and fry it till the raw smell goes off.

  • 9. Add water and salt and let it to boil .

  • 10. Once it starts boiling well, add curry leaves and coriander leaves, then switch off the flame.

Note

Soya Keema Curry goes well with idli, dosa, chappathi, idiyappam and rice.

Ingredients:

• 2 cups All Purpose Flour • 1-1/2 tbsp Rice flour • 1/4th tsp Baking powder • 2 tbsp Curd • 3 cups Sugar • 2-1/2 cups Water • 1/2 tsp Cardamom (powdered) • Ghee or Vegetable oil for frying

How to make Jalebi:

Mix the flour, rice flour, baking powder, curd in a bowl. Mix well, add water and whisk until smooth. Set aside for about 2 hours to ferment. Whisk thoroughly before use. Prepare one string syrup by dissolving sugar in the water. Just before the syrup is ready add cardamom powder. Heat oil in a heavy bottomed pan or kadhai.

Pour the batter in a steady stream into the kadhai to form coils.

Make 4-5 at a time.

Deep fry them until they are golden and crisp all over but not brown. Remove from the kadhai and drain on kitchen paper and immerse in the sugar syrup.

Leave for at least 4-5 minutes so that they soak the syrup. Take them out of syrup and serve hot. Jalebi is ready.

Boil the milk in a large, thick-bottomed kadai till it thickens slightly. Add the alum (phitkari) to the thickened milk and stir continuously till the milk becomes grainy. Cook till most of the moisture evaporates and a solid mass remains. Add the sugar and mix well. Cook for five or ten minutes longer till the mixture thickens again. Grease an aluminum tray with ghee. Pour the milk mixture into the tray and level the surface. Sprinkle the sliced pistachios on top. Leave to set for a few hours in a cool, dry place. When completely set, decorate with silver varq and cut into squares or diamonds
