Breakfast Pizzas 1 2 2 2 1 2 large Tbs. Tbs. lb.

. cup pre-made pizza dough Kosher salt and black pepper Olive oil chopped fresh basil chopped fresh parsley yukon gold potatoes, peeled ground Italian sausage grated asiago or cheddar cheese eggs

Preheat the oven to 400F. Use a pizza stone if you have one. Grate the peeled potatoes and set aside in a colander to drain. Cook the Italian sausage in a medium pan over medium heat. Place on paper towels to drain the grease. Roll out the pizza dough to the desired thickness. Place on a pizza peel sprinkled with cornmeal. Jiggle the dough around a little to make sure it isnt stuck to the peel. Brush the crust with olive oil and sprinkle sparingly with Kosher salt and black pepper. Sprinkle on the basil and parsley. Squeeze the grated potatoes to remove as much of the water as possible. Spread evenly over the crust. Sprinkle with kosher salt and pepper. Spread the Italian sausage and cheese over the top. Crack an egg on each side of the pizza and place in the oven. Bake for about 15 20 minutes, until the crust is done, the cheese is bubbly and the eggs are set.
