TheFrenchterm,“Terroir”(pronouncedtear-wah),iswhat
makesaspecificgrape-growingsite,anditswine,distinctive.
Itisaphilosophy,originatedinEurope,thatbelievesamulti-
tudeofinfluencesinnaturesurroundingavineyard,orwine
region,createawine’scharacter.Thesenaturalfactorsinclude
soilcomposition,dayandnighttimetemperatures,theamount
ofrainfall,thedirectionofthesun,justtonameafew.
TerroirexplainswhysomeofthebestCaliforniaPinotNoir,
forexample,originateintheregionsofCarnerosandRussian
River.Theymaybeseparatedbyabout30milesbutthey
sharesimilarsoilsandexperiencethesamecoolingeffects
frombodiesofwaternearby–eithertheocean,inthecaseof
theRussianRiverarea,orSanPabloBayfortheCarneros
region.Bothregionsproducerichandcomplexwinesmade
fromPinotNoirgrapesthatreflecttheirsimilarterroirs.
Overcenturiesofwinemakingaroundtheworld,ithas

fullyselectedartisancheesesandcrackers?Oh,
anddidImentionthelivemusicfrom5:30
until8:30p.m.,allinoneofthemostunique
tastingroomsinallofNapa?Thatwouldbethe
WaterstoneWinerytastingroom,atthecorner
ofFirstandMcKinstrystreets.
Thetastingroom,knownastheTasteat
Oxbow,isjustafewminuteswalkacrossthe
bridgefromthenow-busyheartofNapa,where
famousrestaurantsseemtobeopeningeveryfew
days.Butforanexcellentmeal,theOxbow
Marketofferswonderfulchoices–Italian,Peru-
vian,Mexican,anoysterbarandthenewand
alreadyrenownedKitchenDoorliterallyacross
thestreetfromthewines(andattimesmusic)of

Fromthebeginning,Waterstonehasbeena
jointventurebetweenseasonedwineexecutive
BrentShortridgeandveteranwinemakerPhilip
Zorn.Itwasformed11yearsagowhenthetwo
metandrealizedtheywerebothintriguedbythe
ideaofmakingfinewinewithanaffordable
pricetag.

Totalproductionisnowaround18,000cases
annually,justabouthalfofitdevotedto
CabernetSauvignon.Outofthetotalproduc-
tion,aboutaquarterofitisexportedabroad,
wheretheirwinesservedutyasbottledrepre-
sentativesofthebountyofNapa.Theyalsomake
somewinesinsmalllots,suchastheirexcep-
tionalRoséofCabernetSauvignon,ofwhichless
than250casesaremade.
Sincethebeginning,ShortridgeandZorn
havereliedontheirstrongaffiliationwithlocal
NapaValleygrowersandvintners.Andtherehas
alwaysbeenthequesttodevelopwinesthat
showtheirvarietalsignatureswhichisachieved
throughthecarefulsourcingofthegrapes.
Onewaytheycanlimitthecostandpassthe
savingsalongtotheconsumeristofocusonthe
wine,ratherthanontheacquisitionofvineyards.
Insteadtheydedicatethemselvestowinemaking,
whilemaintainingstrongandlastingrelation-

shipswithtopgrowersandsecuringlong-term
grapecontractsforpremiumfruit.Theseare
someofthekeystotheirsuccessandquality.
“Simplyput,wefocusonwhatgrapevarietal
growsbestwhere,”winemakerZornsaid
recently.BornintheUnitedStatesandraisedin
Germany,heattendedthatcountry’stopschool
ofenologyandworkedatthefamousWeingut
PierothwinerybeforereturningtotheUnited
States27yearsago.Whenhereturnedhe
becamewinemakeratanumberoftopCalifornia
wineriesandalongthewayhedevelopedagreat
understandingofgrapegrowingandwine-
makinginCalifornia,eventuallybecominga
specialistinitsparticularanddistinctiveviticul-
turalpropertiesandcharacteristics.
“Mywinemakingtechniquesareinformedby
thisideology:thegentlehandlingoffruit,theuse
ofoakwhenitisappropriate,minimalfiltration
andfining,andcarefulpreservationofacidity.

Withthefinestofwines,it’swhatthewine-
makerdoesn’tdowhichmattersmuchmore
thanwhatshedoes.Ifyou’vegotgreatgrapes,
youdon’tneedtoover-worktheresult;at
AcaciaVineyard,whichwasfoundedin1979
lessthantwomilesfromSanPabloBay,
they’vegotonehundredandfiftyacres’worth
ofgreatgrapeswhichhaveproducedworld-
renownedChardonnayandPinotNoirfor
morethanthreedecades.Andasmembersof
theCarnerosWineAllianceandcreatorsofthe
MarshProject,Acaciahastakentheleadin
makingsureCarnerosstaysaplacewhichwill
alwaysproducegreatgrapes.
Themarshinquestionisthe13,000-acre
Napa-SonomaMarshesWildlifeArea,which
ishometotwenty-fivespeciesofwaterfowl
andseveralthreatenedorendangeredbird,
plant,mammalandfishspecies.Themarsh
abutstheCarnerosDistrict,soAcacia’swine-
makingteamcreatesaspecial“Marsh
Chardonnay,”whichissoldexclusivelyatthe
winery,andthefundsgointoaspecialtrust
whichsupportsthemarsh’srestoration.
Equally,tohelpsheltermarshwildlife,Acacia
employeesplantedblackwalnutandcoastal
oaks,andthewinerydonatedtheirrigation
equipmentandemployeetimenecessaryfor
thisproject,amongmanyothers.Butthat’s
nothingnewforthiswinery,for,asyouhave
probablygatheredbynow,it’salwaysbeenat
theheadofthepack.
Indeed,Acaciawasoneofthefirstto

recognizetheCarnerosregion’spotentialfor
PinotNoirandChardonnay,andthewinery
wasalsoaforerunnerinvineyard-designating
theirwinesbecauseofthelot-by-lotmethod-
ologyithasemployedforitsfermentations.
Ratherthanhomogenizingthegrapesor
juice,eachvineyardblockismadeseparately
andgoesintoitsownbarrels,allowingtime
andcellarconditionstodotheirmagicbefore
anydecisionsaremadeaboutbottling–this
helpstopreservetheuniquenessofeach
vintageandthespecialnessoftheparticular
vineyardintheglass.You’llprobablyrecog-
nizethosevineyardnames:St.ClairVineyard,
whichhasproducedsinglevineyardwines
since1979;Beckstoffer;LoneTreeVineyard;
SangiacomoandWineryLakeVineyard.
Thetastingroomis,naturally,thebest
placetotrythesewinesandseethewine-
makinginaction,andtheenthusiasticstaffare
happytopourtheirbest.Acacia’sPinotNoirs
exhibitseductiveflower,teaandfruitaromas,
andtheyshowcaselayeredfruitflavors
complimentedbyspicenotes.Equally,
Acacia’sChardonnaysshowoffopulent
aromasoffruitandcitrus,andoakisused
onlyasaccenttothegenerousfruitand
spices.Inadditiontoseveraldifferentvine-
yard-designatedbottlingsoftheseclassics,the
tastingroomalsopoursotherexclusive
releases,whichincludeSauvignonBlancand
LateHarvestSauvignonBlanc,Syrahand

aboutanyoneinCarneros.Longbeforeany
grapeshavebeencrushed,attentiontolotsof
detailshastohavetakenplace;meticulous
pruning,carefulcanopyandclustermanage-
ment,plantingbeneficialcovercropswithin
thevineyards,andconstantmonitoringofall
facetsofthevineyardenvironmentare
requiredtoproducethebestgrapes.Once
judgedreadyforpicking,everylotis
harvestedandsortedbyhand–onlyperfect
grapesgointoAcaciaChard,Pinotorany
otherwine!Thewinemakingisequallyas
detail-oriented,focusingongentlehandling
andextraction,by-handpunchdownsfor
redsandbarrelfermentationsforwhites.
