Makes 12 Ingredients: 180g Butter 1/2 Cup Brown Sugar 1 Egg 1 Tsp Vanilla Essence 1 Cup Plain Flour 1 Cup Self Raising Flour 1 Tbsp Honey Filling: 60g Butter. softened 1 Cup Icing Sugar Little Warm Water Strawberry Jam/ or Raspberry Jam Method: Preheat oven to 180 degrees and line a cookie tray with baking paper. Cream butter and sugar. Add egg, honey, vanilla and flour. Mix until combined and a dough forms. Roll teaspoons of dough into balls and press down with the palm of your hand to flatten. Repeat until all dough is used. Bake in oven for 15 min or until golden brown. Place on cooling rack. When cold join with icing and jam. Filling: In a small bowl sift icing sugar and add softened butter. Mix together with a little warm water until a stiff icing forms.
