Wineology

INTELLIGENCE FOR THE WINE CONSUMER

BY LEN NAPOLITANO

How important is the pairing of wine with food?

You might have wondered why pairing wine with food should
pose a dilemma. After all, you know your favorite wine, so why
not drink that with every meal? Well, you canand you should
because lesson one in wine-food pairing is your own personal wine
preference overrides all other rules. If you absolutely love Merlot,
for example, and only Merlot, then go ahead and drink it. In the
craft of pairing wine with food, with all of its guidelines, rules,
conditions, and exceptions, it is always acceptable to match your
favorite wine with anything on your plate. If, however, you want
the opportunity to experience marriages of food and wine that seem
to be made in heaven, you may want to find a substitute for your
Merlot now and then.
Wine and food pairing is as much art as it is science. For
example, instinct may tell you a red wine pairs with red meat. As it
happens, it pairs technically speaking, as well. Tannin compounds
in red wine physically link with fat compounds in the meat and
work together as a palate cleanser. Dont worry, though. You dont
need to know anything about the molecular composition of wine
and food to find great pairings. In most cases, all it takes is a
handful of tips pointing you in the right direction and some trial
and error experimentation.
Wine and food pairing theory says wine should be treated just
like food. It has flavor, weight, aftertaste, structure and nuance. The
process of matching a wine with a food, therefore, becomes a mindnumbing examination of countless possibilities as you consider all
of their complexities and variables. But there is a clear place to start,
at least: its the age-old rule that says pair white wine with fish, red
wine with meat. It may be pass with some sommeliers, but for
quick, uncomplicated pairing decisions, it serves the purpose of
launching you into subsequent decision points.
Once you apply the rule and choose either a white or red wine
based on a fish or meat dish, respectively, you arrive at a fork in the
road (sorry about that): which style of red or white wine do you
choose? The answer, generally, is you choose a full-bodied wine
with a robust dish and a light-bodied wine with a delicate one.
After that, you take the decision tree to the next stage: you pair the
dominant component of the wine with the dominant one in the
dish. (If applicable, consider the structure of a wine, along with
how a sauce or topping on the food might complicate a pairing. For
example, a high-acidity white wine complements rich toppings like
lobster sauce while a tannic red wine pairs well with grilled steak
because both wines equalize the fat content in the paired dishes.)
When pairing dominant wine and food components, think about
whether they complement each other because they are similar or
because they contrast. Whichever direction you take, they should
come together to create a palate sensation that neither the dish or
wine could achieve alone. In other words, the food-wine whole
10

should be greater than the sum of its individual parts.

Achieving perfect pairings of wine with food is rare, but you can
optimize your wine and food experience and avoid obvious clashes
by observing the following guidelines:
Pair the richness of the food with the mouthfeel of the wine:
light-bodied wines for delicate dishes and full-bodied wines for rich
food.
Pair similar flavors in the wine and foodfor example, a fruity
wine for a dish topped with a fruity saucematching the fruit
flavors as closely as possible.
Pleasing combinations can be achieved by combining
contrasting flavorsfor example salty cheese paired with a sweet
dessert wine.
If you want to feature a very special wine, like an aged red
wine, choose a neutral accompanying dish without bold flavors
Dishes waith vinegar, like salads, almost always make a wine
taste bad. The best wine option is one with high aciditymaybe a
sparkling wine, a dry riesling, or a French Beaujolais.
Its perfectly fine to drink red wine with fish. Salmon pairs
wonderfully with Pinot Noir.
Choosing a wine that originates from the same country as the
style of food improves your odds of creating a good combination.
For example, choose a wine from Italy (or a domestic version of an
Italian grape variety) to pair with Italian food.
Some classic food and wine pairings include: steak with
Cabernet Sauvignon; lamb with either Merlot or Pinot Noir; scallops
or lobster with Chardonnay; caviar with sparkling wine; port-style
dessert wine with salty Stilton cheese. Except for the last example,
these classics happen to follow the old rule of red wine with meat,
white wine with fishand they match the weight, or mouthfeel, of
the wine with the richness of the food. Thus, each creates harmony
by matching either similar or contrasting components.
You experience a memorable taste sensation when a perfectly
paired wine seems to meld with food on your palate. It may mean
having to find a temporary substitute for your favorite wine, but it
will be worth it. Youll recognize the magic the moment it happens.

Pelletiere Estates Committed to Responsible Stewardship

Located in the heart of the Willow Creek
district on the westside of Paso Robles,
Pelletiere Estateis dedicated to preserving
its rich heritage and land, with 100% of
their wines sourced from its sustainably
farmed estate on Township Road off
Highway 46.With the first grapes planted
in 1993, the winery has been committed
to sustainability for over 25 years, at the
forefront of their business model.
Sustainable winegrowing practices in
our vineyards and winery help us make
high quality wines and provide a healthy
and beautiful environment, said Owner
Janis Denner.
Some of the winerys green practices
include sheep and beneficial birds to
control weeds and pests, cover crops and
drip irrigation, composting, recycling and
reuse to minimize waste, and practicing
environmentally preferred purchasing.
By preserving local ecosystems and
wildlife habitats, the winery hopes to also
protect air and water quality for future
generations.

Their wines are a reflection of this fourthgeneration family, working alongside her
mother MaryAnn, daughter Morgan, and
granddaughter Mayson, namesake of their
Rose wine.
Committed to the traditions of fine
winemaking, the winery hopes to develop
a legacy for future family generations.
With a love and respect for wine, Denner
believes wine should be delicious and
representative of its origin. Pelletiere Estate
wines are truly of the earth, putting more
emphasis on vineyard quality, than on
vilification technique.

Family-Owned and Operated

With a rich history dating back to the
late 1890s, the winery produces exceptional
Italian varietals, paying homage to the
familys heritage. Inspired by her own Italian
background (and named to honor her
father), Denner founded the winery with a
deep respect for family, a love of food and
wine, and the joys of collaborative effort.

We make inviting wines to drink inviting wines that our friends, and by
extension our customers, truly enjoy
drinking, said Denner. We have a
minimalist approach in the winery, which
means we do things in a much more oldworld, hands-on way.

Winemaker Philosophy
Defining their wine as pure with
varietal correctness, the varieties are
rare and sophisticated, with limited
production unique to the Paso wine scene.
Winemaker Amy Butler creates wines that
are elegant, refined and understated. With
a true passion for subtlety, her wines are
memorable, pushing the envelope of quality.
Amy Butler is gifted, dedicated, and
enormously creative, said Denner. She
has been an extremely valuable part of the
Pelletiere Estate team.

Elegant Italian Style Wines

One of the very few producers making
these Italian varieties, their wines are 100
percent estate grown, specializing in Italian
varieties such as Sangiovese, Nebbiolo,
Montepulciano, Lagrein, and Zinfandel.
Additionally, the winery also features Syrah
and Viognier, with a dedication to vineyard
care, picking at optimum ripeness, and
creating wines that express the purest
flavors of the vineyards terroir.
I fell in love with Italian wines during
one of my trips to Italy, said Denner. I
find them elegant and very interesting. Its
hard to name my favorite, they are all so
uniqueI truly love and appreciate all of
them.
Top sellers including the 2012 Nebbiolo
beautifully elegant, with notes of candied
tangerine, mahogany and dried herbs. The
2014 Montepulciano is medium bodied,
with luscious ripefruit, notes of smoke,
chocolate, earthiness rich, silky and smooth.
The 2013 Lagrein is rare, full bodied with
dark ripe fruits and luscious texture.

HAMMERSKY
VINEYARDS
An Exquisite Wine Country
Destination
As you travel to the westside of Paso Robles, the winding road leads you to one
of the most magnificent locations on Vineyard Drive the stunning HammerSky
Vineyards & Inn. Named after the owners sons, Hamilton and Skyler, the majestic
backdrop of the rolling coastal terrain provides a picturesque setting creating the
perfect ambiance for a leisurely afternoon sojourn. The HammerSky estate is one
of the Central Coasts most elegant locations, and includes a restored century old
farmhouse, a traditional barn and an expansive lawn overlooking the 50-acre
vineyard. Relax, enjoy a lawn game and savor the award winning wine.
With a focus on estate-grown, artisan wines, the eco-friendly HammerSky
estate vineyards are planted to Merlot, Cabernet Sauvignon and Zinfandel which
provide the foundation for the Bordeaux-centric portfolio. Now part of the new
Adelaida / Willow Creek AVA designation, Owner/Winemaker Douglas Hauck
describes HammerSky wines as Couture crafted wines for the senses, likening
the wines to what Prada would look and feel like if it were a wine. The wines
are rich, with an intense flavor profile that reflects uncompromised quality and
attention given to each lot. Current releases include the Open Invite blend (75%
Zinfandel and 25% Merlot), Party of Four blend (60% Petit Verdot, 15% Merlot,
15% Malbec and 10% Cabernet Sauvignon) and straight varietals of Zinfandel and
Red Handed Merlot. In addition to the HammerSky wines, there is also a tasting
room favorite the Naughty Princess Detained Sparkling, which tantalizes your
senses with a crisp acidity hinting at fresh pear and green apple flavors and a
bubbly effervescence that is a party in itself celebrated with each taste. Upcoming
new releases include the highly sought after Ros and a limited release Cabernet
Sauvignon. $10 Tasting Fee includes a flight of five wines; complimentary tasting
for HammerSky wine club members.

Weddings & Events

Join HammerSky Vineyards & Inn for a Cab Cult Event on
May 14th and lawn games and wine during the Paso Robles
Wine Festival Weekend, May 20th-22nd. Added bonus:
Inquire about our complimentary helicopter parking! The
HammerSky estate is one of the Paso Robles wine regions
most elegant and sought after wedding locations. Owner
Kim Hauck has designed a magical setting, perfect for
any brides special day or the perfect social celebration.
Farmhouse Rental Featuring 3 bedrooms, the Farmhouse
at HammerSky is available for private rental a treasured
experience for a group of friends, corporate retreat or
family gathering.

Wine Clubs
HammerSky wines are available at the tasting room and in select fine
restaurants in Orange County. HammerSky offers two distinct wine clubs -the
Hammer Club and the Sky Club. Wine club benefits include priority access to new
releases, exclusive invites to HammerSky events, access to host private lunches in
the White Barn and discounted stays at the exquisite HammerSky Inn.

Fun Fact
The HammerSky estate is graced with beautiful, native cypress trees so
captivating, that the builders of Hearst Castle requested some of the cypress trees
be moved by horse and buggy decades ago, to the majestic Hearst Castle where
they found a new home next to the Neptune Pool.

CHAMISAL VINEYARDS
Chamisals Distinctive Style
There are many ways to describe Chamisal Vineyards. You might use the
words elegant, picturesque, or inviting. Each of these captures a little bit of
what makes Chamisal special.
The tasting room and outdoor seating area were designed to make people
feel comfortable, and inspire them to linger while they sample some of
Chamisals Pinot Noirs, Chardonnays or other fine wines. Andrea De Palo,
Director of Consumer Sales, said that she wants guests to visit Chamisal not
only to taste the wine, but to enjoy a complete vineyard experience.

Spend the Day at Chamisal

In order to really appreciate what Chamisal has to offer, a trip to the
vineyard shouldnt be a quick stop on a wine tasting tour of the Edna Valley,
but should be a leisurely experience. You can find out more about the way
Chamisals wines are produced, or spend time in one of the beautiful outdoor
areas. Visitors describe the views from the garden patio and picnic areas
which overlook the Estate vineyard, and are surrounded by the Santa Lucia
Mountains, as amazing.

A Vineyard in Touch With Its History

Chamisal Vineyards has a long history in the Edna Valley; it was the first
vineyard / winery in the area. It was named after a native plant with a white
flower called Chemical that is found throughout the property. Over the years
the winery has produced different varietals including Chardonnay, Pinot, Noir,
Grenache, Syrah, and Pinot Gris.

Vintages to Look Forward To:

In the near future there will be several new wines for
visitors to try in the Chamisal tasting room. The first
is a Pinot Gris that will be available in May. This is the
last time the vineyard will offer wines produced from
this varietal for the foreseeable future since the grape
vines have been removed.
Also, look for two other exclusive wines as well,
including the 2015 Ros of Pinot Noir, made in a drier
style, and the 2014 Estate Chardonnay. These are in
limited quantities and are expected to sell out quickly.

7525 Orcutt Road, San Luis Obispo

The tasting room is open seven days a week: 10-5pm.

LIONS PEAK VINEYARDS

A Tradition of Old Vines, Exceptional Terroir, and a Discerning Palate
Jennifer Arant is a sommelier and the winemaker and
vineyard owner of Lions Peak wines. She shares her wines
with others at her tasting room in the heart of Solvang,

20

Nestled in the Santa Ynez Valley, in the quaint Danish town

of Solvang, Lions Peak Vineyards tasting room offers visitors a
portfolio of small-lot, hand-crafted, highly-acclaimed Bordeaux,
Rhone and port wines. The cozy and well-decorated tasting room
is recognized as artistic expression of the owner, winemaker and
Sommelier, Jennifer Arant, a former professional interior designer,
who has integrated her prior interior design background to the
creativity to the tasting rooms dcor and her wine labels and
packaging.
From LPs Estate Cabernet Sauvignon, Merlot, Cabernet
Franc, Petit Verdot, Mourvdre, Petite Sirah, Marsanne, Cabernet
Sauvignon Ros, to their blends and ports, there is something
for every palate. If, as many believe, each wine tells a story,
then it is particularly true of Arants BFF (Best Friends Forever),
Lulu, Sisters, Lionnsse, Vis Vis, Bon Courge, Roaring Lion,
Octavian, and Augustus XIX. And, Lions Peak still offers limited
quantities of many of their library and award-winning wines
going back to 1994.
Lions Peaks tasting menu changes weekly and features a
selection of flights ranging from their white and red Rhone and
Bordeaux varietals, blends, or their Cabernet Sauvignon and
Zinfandel Ports which are paired with the Lulu vegan chocolates.
LP also offers an exquisite and unique collection of decorative
wine glasses from Murano Italy, and branded, wine-related
accessories, all of which make wonderful gifts.
Often asked, what makes Lions Peak wines taste so
exceptional and win so many awards? Arant claims its a
combination of three factors: the maturity of LPs Estate 45-yearold Cabernet Sauvignon vines; the terroir of the grapes for the

Follow us on Twitter @WineCountryTW

Wine Country This Month >> Wine Country News

wines; and the fact that she is personally involved with the
taste profile of each of the small lots of the wine production.
According to Arant, when you are a small producer, its a
hands-on operation. I taste each of my wines with making
it an artistic expression of nature. For me, everything
associated with wine, from the care of the vines in the
vineyard to the timing of the harvest, the aging, blending,
bottling and presentation is art.
According to Arant, These three factors are the reasons
why, since Lions Peaks inaugural release in 1994, we continue
to win Best of Class, Gold, Silver and Bronze medals in such
well-established wine competitions as the Orange County and
Los Angeles County fairs, the California State Fair, the Long
Beach Grand Cru and Tasters Guild International Competition
competing against much higher-volume, much better-known
wineries here and elsewhere in California.
Lions Peak opened one of the very first downtown tasting
rooms in Paso Robles in 1998, and after the 2003 earth quake
there, opened their present tasting room in Solvang in the
spring of 2004. On Memorial Weekend, Lions Peak Vineyards
will celebrate its 12th Anniversary in Solvang. You are invited to
share their special weekend celebration and taste their awardwinning wines dating back to their 1994 release! ERIC HUTCHINS

A Lot Can Happen in a Year

Just ask Gary Eberle who, when on Wine Country This Weeks cover last year,
was still in the middle of a bitter battle to win back his winery. Today, Gary and
his wife Marcy are back on top, and not looking back. It was one of the hardest
things Ive ever doneand Ive done a lot, he says, regarding his 43 years in the
wine industry. This one was below the belt. But the cream rose to the top.
Not just the cream, but the dream. Last summer, Eberle hired a new
winemaker, re-assembled his team, and got to work. While picking up accolades
including Winery of the Year and Best of Show at the Central Coast Wine
Competition, and earning the 2015 Wine Lifetime Achievement Award for the
state of California, Eberle returned his focus to the thing he loves best; making
great wine in Paso Robles.
Were one of the top award-winning wineries in the United States, and Im
proud of that, Eberle says. Ive worked hard to get us to a place where I know

were making some of the best wine in
the country and its got my name on
it. Who could want more?
Visiting the Eberle Winery Tasting
Room is essential to an authentic
wine tasting in experience in Paso
Robles. With picturesque 360-degree
views of vineyards and the Santa
Lucia Mountains just off Hwy 46
East, guests immediately feel at home.
Flip a coin into the iconic bronze
wild boar fountain before entering
the warm and eclectic tasting room
(Eberle translates as wild boar in
German). Chances are the sociable
Godfather will greet you himself
with his two poodlesSangiovese and
Roussanne. Strike up a conversation
with the legend about the upcoming
harvest, his favorite vintages, or his
forty-three year history of winemaking
in Paso Robles.
As the longest, continuouslyrun family owned winery in Paso
Robles, Eberle is proud to offer

complimentary wine tasting and

tours of their 17,000 square feet of
underground caves. The tours offer
an in-depth look at the winemaking
process and also offer a glimpse of the
Wild Boar room where Eberle hosts
winemaker dinners.
Shop for local and handmade gifts
and then head outside to take full
advantage of the magnificent Paso
Robles weather and the panoramic
vineyard views on the large deck.
Eberle Winery is dog friendly, so feel
free to walk the grounds or unpack
your picnic and enjoy a bottle of your
favorite Eberle wine. On weekends,
you might also catch Gary and Marcy
grilling on the barbecue or making
wood-fired pizzas to raise money
for the local Childrens Museum.
Last year alone, the winery donated
$10,000 from these impromptu
events.
As for Eberle himself, right now
he has his eye set on what the future

holds for Eberle Winery; and he has no

plans on slowing down. People always
ask me when Im going to retire, he says
with a smile. Look around. I retired 43
years ago when I got into this business.
Its my dream. Its my life. And Im
having a blast.

Executive Chef Santos MacDonal is a firm believer in using fresh,

locally sourced ingredients. He visits the Central Coast farmers
markets so often, looking for inspiration for the weeks menu, that he
is well known to most of the purveyors.
Prior to moving to Paso Robles and opening Il Cortile with his
wife and managing partner, Carole MacDonal, Chef Santos worked in
several highly acclaimed restaurants in Southern California, including
Giorgio, Locando de Lago and LAngolo Caf. His passion for fresh
ingredients, creative drive and culinary talents are all reflected in Il
Cortiles menu, which changes seasonally and offers inspirations as
specials. Every item, including the pasta, is made in-house with Chef
Santos personally overseeing every dish that leaves the kitchen.
Although the menu changes often, there are a few dishes that
remain due to their popularity. Grilled octopus with fresh vegetables
marinati leads an impressive list of antipasti; homemade pappadelle
with wild boar ragu is a favorite for many regulars, as is the pan seared
venison medallions in a red wine sauce. For a sweet ending, there is
nothing like the panna cotta.
The intimate dining room and cozy courtyard are the perfect setting
for a special dinner or romantic evening out. Impeccable service
and an impressive wine list paired with Chef Santos creations have
garnered Il Cortile a reputation as one of the top culinary destinations
in Paso Robles. Locals and wine country visitors anxiously wait to hear
the evenings specials each visit.

HITCHING POST:

Of Food, Wine & Tradition

In Santa Barbara everyone knows The Hitching Post - either the wine and their
flagship Pinot Noir, or one of the two steak houses. Weve been in the restaurant
business over 60 years, says Frank Ostini, of his familys restaurants in Buellton
and Casmalia. We started making wine in 1984 really as a means to complement
the food. So he and wine partner Gray Hartley set out to make small amounts of
wine with little thought about growth. Gray and I had enough guts to identify Pinot
Noirwhen few even cared about Pinot, says Frank. Hitching Post does not own
any vines, but they first sourced their grapes from the highly regarded Sierra Madre
Vineyard in Santa Maria and have continued to search for the best grapes they can
find.

Pinot Noir: The New Normal

Frank learned his savvy business acumen from his parents. We were taught to
always use high-quality ingredients, he says. And to this day The Hitching Post II
restaurant is known for oak fire grilled meats and seafood. We use oak wood fire
which has a long tradition in our region, from the Native Americans to the Spanish,
up to today, cooking over flame has remained a constant. And the native red oaks
that dot the region provide the impetus for nuance of character in the foods at The
Hitching Post. We are looking for a balance of flavor with nothing that overpowers,
he says, which is why seasonings are pretty much limited to salt, pepper, garlic and
the gentle wood smoke, which is the standard according to Frank. That philosophy
is true in the Hitching Post kitchen and its true with Hitching Post wine. We are
looking for complete flavors with nothing that overpowers, so our wines are low
tannin, good acidity and ripe fruit. But some people have asked why a steakhouse
doesnt focus on Cabernet Sauvignon? I am reminded that in Burgundy beef with
Pinot Noir is the norm, Frank says, alluding to the comprehensive balance of flavors
they achieve. Though there are 11 iterations of Pinot Noir and there are also a few red
blends as well as Merlot and Syrah.

26

The Upside of Sideways

You probably remember The Hitching Post II from the
Oscar winning film, Sideways that was, in essence, a
love letter to the Santa Barbara food and wine scene.
We were the recipients of Sideways. As demand for
his and Grays wines increased because of the film, the
partners needed to expand wine production to keep
pace, and they grew their volume from 5,000 cases to
15,000 cases. However, as Frank notes, they kept their
pricing the same. The goal of providing quality food and
drink at reasonable prices has kept The Hitching Post
on the radar for decades. We dont pretend to be a
highfalutin place, Frank jokes, he just keeps practicing
the principles his parents taught him.
In fact at recent Pinot Noir gatherings on the Central
Coast Frank and Gray have opened older vintages of
Hitching Post wines dating back 24 years. They are still
drinking beautifully, no over extraction, its all about
balance and harmony he says. It shows me our wines
are delicious when they are young, and real interesting
as they age, he says. Such is the way of Hitching Post
food and wine, and reason you need to try food and wine
Franks way.
Hartley-Ostini Hitching Post Winery tasting room is

Wine Tasting in San Luis Obispo County

28

ts no wonder the people here

call it SLO. No one is in any hurry
in the cafes or on the sidewalks,
and certainly no one is in any rush
to leave. Strangers are genuinely
friendly, always ready to talk about
their favorite hiking trail or barbecue joint, or to point the way to the
winery with the best Pinot Noir. Its
all part of the SLO life, that combination of good stuff that makes visiting here so nourishing to the soul.
San Luis Obispos unusual natural
beauty, along with its gentle climate,
first attracted the Spanish padres to
the area in the 1700s. In 1772 they
built the fifth of Californias 21 missions here, on the banks of San Luis
Creek, and named it Mission San
Luis Obispo de Tolosa. Today, many
consider this the most beautiful of
the Spanish missions.
More than 200 wineries produce
critically acclaimed vintages in Paso
Robles, Edna Valley and Arroyo
Grande Valley. Visitors can head out
along the gorgeous country roads
to sip their way through the vineyards.

Obispo County, go to visitslo.com

San Luis Obispo Wine Country: Six Themed Tasting Trails

San Luis Obispo (SLO) Wine Country
on Californias Central Coast may be a small
oceanfront region, but the wine tasting
possibilities are almost limitlessas evidenced by
the six themed tasting trails.
Visitors can build local itineraries around a
range of lifestyles and wine styles, from urban
tasting rooms to beachfront wine tasting. The
trails are highlighted in the new SLO Wine
Country tasting maps, as well as at www.
SLOWine.com.
SLO Wine Country is an intimate coastal
region with less than 30 wineries, but theres also
a ton of diversity here, too, said Heather Muran,
executive director of SLO Wine Country. These
wine trails really showcase all that we have to
offer, and they enable you to follow your personal
tastes and timeline as you tour the region.

Good to Know Before

Heading to the Wineries
BY CHARLES NEAVE
For the most part, going wine
tasting is about the easiest thing in
the world, especially in California
where wineries and tasting rooms
abound. Mostly, wine tasting is a
matter of doing a little research and
planning your day. Here are some
tips that have proven to be helpful
and are designed to help make the
sensory adventure of wine tasting
all the more enjoyable.
Before you start off, pack a few
essentials. Water (plenty of
water) and something to snack
oncrackers or a baguette.
Many wineries have picnic areas
and there are plenty of delis and
bakeries that can make up a lunch
for you, or make your own.
Be sure to nibble during the day and
make time for lunch. Two tips: drink
at least twice as much water as
you do wine, and remember that
you dont have to drink everything
poured into your glass.
Dont be afraid to ask questions.
Time again I have heard
knowledgeable winery workers
say that there is no such thing as
a stupid question, and they mean
that.
You can drink what you want, in the
order you want. If you like reds, say
so; if you dont like sweet wines,
speak up. But the idea of starting
with whites, then going on to reds
and then sweet wines is a good
guide.
If there is a particular wine you want
to try and it is not on the list, ask. Most
tasting rooms are happy to pour a
little if you show enthusiasm.
Look for tasting rooms in towns.
Many of these are cooperative
tasting rooms, where in one place
you might find wines from a
dozen or more small-to-medium
premium producers.

Alapay Cellars
Heavenly Wines from the Central Coast
Avila Beach, long known for being an oceanfront destination,
where the relaxation is key, has been the home for Alapay Cellars
since 2001. Owners Rebecca and Scott Remmenga founded
Alapay (which translates to heavenly or world-above in the
Chumash Native Americans Samala language) and set upon a
course in crafting limited-production wines which highlight the
vast flavor profiles of the vineyards of the Central Coast.
A visit to the Alapay Tasting Room offers guests an opportunity
to peruse the wide selection of whimsical wine gifts and
accessories, all while enjoying tastes of the winerys menu of
wines. With more than ten wines to choose from, guests can taste
through the Limited Release menu of seven wines or add on the
Reserve wine tasting which includes three additional wines.
A tasting experience at Alapay is an adventure of discovering
the terroir of the Central Coast wine growing appellations. The
journey includes both a 2014 Central Coast Chardonnay and
a 2014 Bien Nacido Reserve Pinot Noir. For Rhone enthusiasts
a single varietal Cinsault offers beautiful notes of cherry,
strawberry and spice. The Reserve Syrah is a long-standing
favorite of Scotts and the recipient of the 2016 Double-Gold at
the San Francisco Chronicle Wine Competition. Alapay Cellars
Rebekah is a brilliant multi-layer, flavorful blend of Cabernet
Sauvignon, Petite Sirah, Syrah, and Lagrein with firm acidity
and medium bodied tannins.
With a production of 5,000 cases all Alapay Cellars wines are
sold exclusively through the tasting room, with priority access
to Alapay wine club members. Wine club members receive
complimentary wine tasting, discounts on wine and merchandise
purchases and invitations to special events, including the annual
winemaker dinners and exclusive wine club pick-up parties. The
winery also enjoys cruising with their club members, which include
3 Avila Bay Sunset Cruises per year, and one BIG cruise traveling
to destinations all over the world.

Wine Tasting in Santa Barbara County

38

A Spirit and Passion for Winemaking

n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic wine
growing region. The first vineyard production in these rolling coastal hills dates back to 1782,
when Junipero Serra planted vines on Mission land. About a hundred years later, there was 260
acres of luscious vineyards and seventeen winemakers in Santa Barbara County. Sadly, the Prohibition Era destroyed many of these historic vineyard sites and mostly put an end to winemaking in
the regionas was the case in many of the beautiful winegrowing regions across the state. With
that being said, the spirit and passion for winemaking never left Santa Barbara County, and this
wine growing region is alive and well today. Talented winemakers are producing outstanding and
pure terroir driven wines from the five American Viticultural Areas (AVAs), planted mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing region on
the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the wine across the
county that has continued to uphold this bountiful regions reputation. Sprawling vineyards and gently rolling hills create a picturesque scene for visitors and locals alike, who visit the many wineries,
tasting rooms and wine bars in the area. In the five AVAs, wine tasters will find a nice range of wine
styles amongst the Burgundian, Rhone and Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir and Chardonnay, due to the maritime influence. This ensures a long temperate growing season which the
Burgundian varietals crave. With ample amount of sunlight, the grapes ripen very slowlyperfect
for producing terroir driven wines with pure varietal characteristics. In the southern region, there is
more of a diurnal shift with warmer nights and cooler days. This area sees less fog and has different soil types than what is found closer to the coast. The Bordeaux and Rhine varieties flourish in
this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable
minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and talented
winemakers; join them year round at their many events, celebrations and festivals, as well as in their
tasting rooms.

Martian Ranch is the creation of Massachusetts native Nan

Helgeland, who found her inspiration in the world-class vineyards and
wines of Santa Barbara County. After years of searching for the perfect
property, she purchased this 102-acre parcel on Alisos Canyon Road in
2007, and named it Martian Ranchthe combined nickname of her
two adult sons: Martin and Ian.
Today, Martian Ranch & Vineyard is a Demeter certified,
biodynamically farmed estate winery, with twenty acres of vines
planted to ten different grape varieties, each perfectly suited to the
climate of the ranch. The vineyards were planted in 2008 under
the guidance of biodynamic consultant Philippe Armenier, with the
first estate vintage in 2011. Martian Ranch is known for carefully
farmed, vibrant and lower-alcohol wines. Eric Bolton (formerly
Martian Assistant Winemaker) is now at the helm as Winemaker.
Estate varieties are Albario, Grenache Blanc, Viognier, Clairette,
Gamay Noir, Mourvdre, Grenache Noir, Syrah, Cabernet Franc and
Tempranilloabout two acres planted of each.
Biodynamics, which takes organic farming to the next level, strives
to create a balanced ecosystem while focusing on the health and
fertility of the soil. Lunar, solar and cosmic rhythms are followed for
all farming practices, which create an optimum environment for the
vines. Each part of the growing process revolves around four elements:
root, leaf, flower and fruit. Together, these elements create the highest
expression of harvest. While these farming methods may be more
labor intensive, the quality shows in each bottle, carefully crafted
between the earth and the cosmos.
The tasting room opened in October 2014 and offers a wide
selection of estate wines. Each wine is named after a celestial
notion, from the Stellar Viognier to Local Group Grenache Noir and
Mothership Grenache Blanc.
Martian Ranch & Vineyard is featured in the New York Times,
SF Chronicle and Jon Bonns book, The New California Wine.
Experimental and eclectic, the estate is dedicated to the journey, from
sky to ground to grape to barrel to bottle and straight into your glass.
Located on Alisos Canyon Road between US 101 and Foxen Canyon
Road, look out for the alien up ahead! Visit Nan and crew at the tasting
room Wednesday through Sunday from 11:00 a.m to 5:00 p.m.

FREQUENCY WINES
A family run operation, Frequency Wines produces Santa Barbara County Rhne
varietals. Initially envisioned by Almond
Wasserman in 2010, she recruited her brother
Zac to be the winemaker, and her mother Maria
to manage the tasting room and cellar club.
Zac is currently the Assistant Winemaker at
Tensley Wines, a heavy hitter of Santa Barbara County Syrah, produced by Zacs mentor, Joey Tensley. The
Frequency wines are evolving into beautiful examples of Santa Barbara County classics as the brand finds
top quality vineyards and refines their unique expression of this area.

Nestled under California pepper trees and overlooking the Alamo

Pintado Vineyard between Solvang and Los Olivos, Lincourt Winery
retains the rural charm and simplicity of an earlier era; its one of the
reasons people flock to this region. This was once a dairy property and
the old farmhousean original 1926 Sears Craftsman kit home which
sold for around $400 at the timeserves as one of the most unique
and historic tasting rooms in all of Santa Barbara. The Lincourt picnic
grounds, lawns and gardens are the perfect spot to spend a leisurely
day with family, friends and a bottle of wine.
Lincourt was founded by Bill Foley in 1996 and he has four estate
vineyards located within the Sta. Rita Hills and Santa Ynez Valley
regions of Santa Barbara. Lincourt began when Bill Foley fell in love
with the rugged coastline, picturesque towns, oak studded hills and
the casual graciousness of Santa Barbara wine country. Named for his
two daughters, Lindsay and Courtney, the Lincourt wines express the
complexity and diversity of their estate vineyards. But when Foley first
planted grapes in the Sta. Rita Hills region, it was largely undiscovered.
Today, of course, it is one of Californias most coveted, cool-climate,
viticultural regions and the Lincourt wines are produced entirely from
their two estate vineyards within that AVA. They are rolling hillside
sites that offer diurnal temperature swings and long growing seasons

making the wines rich, structured, fruit forward and regionally exact.
Inside, the tasting room has refinished wood floors, a new tasting
bar, and lighting fixtures, all still reminiscent of its 1920s origin, and
they have a good selection of wine country gifts. Best of all are the
new release wines, which are named after the proprietors daughters,
like their Lindsays Pinot Noira hard harvested beauty which
spends 11-14 months in barrel to give it additional complexity, and
Courtneys Chardonnay. Courtneys Vineyard is one of Santa Barbaras
most historic properties, originally part of the Spanish Land Grant. Its
a beautiful south-facing hillside which climbs from 500 to 1,000 feet
above sea level and features 59 individual micro-blocks delineated by
soil type, elevation, grade and exposure to the maritime winds off the
Pacific Ocean. That means you need to try this Chardonnay! Theres
also their Steel Chardonnaynamed for the fact that there was no
barrel time, but instead fermented in stainless steel giving it more crisp
citrus flavors, and old favorites like their Sauvignon Blanc, Syrah and
Cabernet Sauvignon.
Every winery has a wine club but Lincourts is unique. In addition
to the five shipments annually, and the generous 30% discount, the
best part is reciprocity; free tastings and discounts at 10 other tasting
rooms owned by Foley Family Wines stretching from Santa Barbara to
Napa and Sonoma. Bottle prices at Lincourt range from $18 to $50, so
stop by the historic house and sample this seductive juice. Tasting fees
start at $10. Lincourt is located at 1711 Alamo Pintado, just outside of
Solvang and is open daily 10:00 a.m. to 5:00 p.m. Contact the winery
directly at www.lincourtwines.com or by calling (805) 688-8554.

Larner Vineyard, a 34 acre estate vineyard nestled in Ballard

Canyon in the Santa Ynez Valley may arguably be the best grape
growing region in Santa Barbara. The vineyard and winery is
managed by Michae Larnerl and his wife Christina, Michael being
both vineyard manager and winemaker. Michaels sister Monica, a
wine writer based in Rome, is also involved in the family operation
contributing her individual wine based talent and expertise.
Michael, formally educated at UC Davis in viticulture and enology,
and with a geology degree from the University of Colorado,
received hands on practical training learning his craft in both Italy
and France. Co-founder of the recently established Ballard Canyon
AVA, he focuses primarily on growing quality Syrah, but also grows
Grenache, Mourvedre, Viognier and a small block of Malavasia
Bianca, his own personal tribute to Italy.

the diminutive size, Emily Dixon (Tasting room manager and level 1
sommelier), or one of her knowledgeable staff will always make you

worry about the crowd. Everyone coming to Larner is treated not only
to the wines, but to colorful history and vignettes of Larner, the family

J. Ludlow Vineyard
Small Production and Dedication to Craft
J Ludlow Vineyard, up in the idyllic Los Olivos area, is the home
away from home for owners Allan and Jane Jones. Originally from
Cardiff, Wales, the couple fell in love with the Santa Ynez Valley
during one of their many trips to California. Stumbling upon a
beautiful ranch in Happy Canyon, they quickly developed an
interest in wine, purchasing Westerly Stud Farm in 2007. Keeping
production small, their dedication to their craft is evident by their
numerous awards and recent accolades.

unique to the Los Olivos region. With high ceilings, big windows,
and a welcoming atmosphere, it is the perfect place to grab a glass
of their award-winning wine. Sourcing most of their grapes from
Camp 4 and La Presa Vineyards in the Valley, the winery strives
to keep things local and family-run, dedicated to great taste and a
sheer enjoyment of wine.

Looking Ahead
In the near future, J Ludlow plans to plant more than 80 acres
of their grapes, focusing predominately on Bordeaux varietals
of Merlot, Cabernet Sauvignon and Sauvignon Blanc. When
choosing varietals, they wanted wines that would highlight varietals
uncommon to the region, while sharing their passion for French
wines. Though the couples background is in coffee production,
they have successfully transformed a new agricultural product
blending their taste and passion for the region.

All in the Family

Family ties inspire each varietal, including their wine club aptly
entitled The Old Ludlowdian. One of their most popular sellers,
Kemsley Cabernet Sauvignon is named after Allan, who holds
the prestigious title of Lord Kemsley in Great Britain. The winery
itself is named after the street Allan was born on. And of course,
the 2008 Jane Merlot, a gold medal winner at the Los Angeles
International Wine Competition, is named after his beloved wife.
Other unique wine club highlights include a Pinot Grigio and
Primitivo Rose, perfect for any summer picnic.
Heavily involved in charity, the jigsaw logo signifies their
commitment to fighting autism and Aspergers worldwide (a
common symbol in healthcare and popular culture). In their
native country, Allan and Jane Jones own Beechwood College, a
specialist residential college for students dealing with these very
conditions. They also work closely with the Koegel Autism Center
at UC Santa Barbara and make a donation to the center for every
botle of Sauvignon Blanc sold in the tasting room.

just south of Lompoc. At the
end of this valleys twisty, windy

frequented by hardcore surfers,
campers and those in-the-know
out to get an amazing burger at
the beachside caf.
Although our Cargasacchi
family ranches originally only
held Angus cattle and grew lima beans, we started planting grapes back in the late 90s,
and now have vineyards in the Jalama Valley (Cargasacchi/Jalama Vineyard), as well as
in the renowned Sta. Rita Hills AVA (Cargasacchi Vineyard). Their close proximity to the
ocean keeps the vineyards cool throughout the long Central Coast growing season. This
is ideal Pinot Noir country.
I began making wine in 2004, while I was the Oenologist for Fess Parkers winery.
After moving on to Rideau Vineyard, demand went far beyond what I could make on
the side, so I searched out a spot close to home and started my production facility in the
Wine Ghetto in 2010.
I love making wine. I tend toward small lots, with a focus on vineyard designated
wines and the varietals that I love. The individual lots are about 100 cases or less.
Though I grow and produce Pinot Noir, Pinot Gris and Viognier, Im passionate about
bigger bodied wines as well, including Grenache, Mourvdre, Syrah and my sought after
blendsEl Capitan and Clementina (a wonderful blend of Sauvignon Blanc and Riesling).
The grapes that I dont grow, I source from select vineyards in the Santa Ynez Valley.
To experience the stunning small production wines, visit Jalama Wines in the Wine
Ghetto at 308 North 9th Street, Unit C, in Lompoc. They are open Friday through

Mosby Winery & Vineyard Became Intrigued by Italian Varietals
Winemaker and owner Bill Mosby bought the winery property
with his wife, Jeri, in 1976. Bill planted grape vines immediately,
including Pinot Noir, Gewurztraminer and Riesling. Even though
these first releases received excellent reviews and established Bill as
one of the early wine pioneers of Santa Barbara County, he wasnt
satisfied with the varietals.
Bill became intrigued by Italian wines in 1975, and began to
cultivate Sangiovese and Nebbiolo; the wines were bright and
fruity with clean finishes, perfect for food pairing, and just what
Bill had hoped for. The number of Italian varietals planted in the
Mosby vineyards continued to grow, and in 1980 the Mosby tasting
room
was opened in the old Carriage House on the Mosby Estate.

itself exclusively to Italian varietals. Bill began taking regular trips

to Italy, meeting Italian winemakers and gathering information.
His passion for cultivating new and unusual Italian wine grapes
has continued to include lesser-known varietal gems including
Teroldego, Lagrein, and the first domestically-produced Sagrantino.
The new-release 2012 Mosby Dolcetto earned a Gold medal at the
San Franciso Chronicle Competition this year, and Mosby produces
an excellent sparkling wine, the dry Stelline di Cortese, as well as
Italian-style brandies and a raspberry dessert wine. Not satisfied
with the number of varietals produced in his own vineyards,
Bill expanded his production to include several Italian imports.
Fellow winemaker and friend Marco Cavalieri oversees Bills wines
imported from the Marche region, and Italian sparklers for the
Mosby wine club, made specifically from the Erbaluce and Neretto
grapes of Caluso, are imported from the Piemonte region.
Currently, Mosby Winery produces over 18 award-winning CalItalian varietals. All of the wines are limited releases, and available for
sampling in the small tasting room located on the Mosby estate. Visitors
can expect a cozy ambiance, friendly wine educators and a wine tasting
experience that will bring a new awareness of Italian varietals.

Santa Barbara Wine Country Cycling Tours offer single day and
multi-day trips available for people of all skill levels, and though
cycling can seen daunting, its certainly not. Dont think Tour de
France, rather think gentle cycling and killer views all at your
own pace. Tour distances and difficulty can be modified to fit the
abilities of our guests, says owner Corey Evans. Therefore, youre
not locked into anything you dont want to do. This means a novice
can enjoy a gradual ride at a satisfying pace, and a hard-core cyclist
can get the burn they crave while getting the wine they want. The
Santa Ynez Valley is known for its gentle rolling hills of vineyards,
long stretches of road winding through farmland, and tucked away
canyons and vistas providing the perfect atmosphere for a ride.

when husband and wife, Mike (featured in the picture below) and

been perfecting their winemaking craft and honing their passion
for premium made Lodi wines. Their Chardonnay fruit comes from

other Lodi vineyards to increase their varietal selection. They also
source fruit from Amador County vineyards, specifically for their
production of Tempranillo.
Today, they produce ten varietals, which can be enjoyed in the
tasting room via flights or by the glass, alongside cheese plates
and small bites. With favorites like Zinfandel and Merlot, Italian
specialties like Barbera and Sangiovese, and the ever popular
Chardonnay, Cantara Cellars has the perfect selection of wines for
everyone. For an exclusive experience, consider a private event or

Magnavino Cellars
In 2008, Robert and Barbara Wagner achieved their dream of
opening a winery. Since then, the husband and wife team have
never looked back. Magnavino Cellars is a great place to visit for
fantastic wine, and a perfect location to gather with friends and
share conversation, smiles and laughter. At Magnavino Cellars, wine
is a celebration of life and love, and Robert and Barbara strive to
make each guests experience enjoyable.
The passion they have for their vines is admirable. In the cellar,
they work with stainless steel, and American and French oak
barrels to achieve the flavor profile and complexity they desire
for their wines. The result is award-winning wines with beautiful
characteristics. In the past three years, MagnavinoCellars has won
sixty-five medals from international wine competitionsincluding
two time Best of Class for the 2010/2011 Petite Sirah at the San
Francisco International Wine Competition, a Platinum medal for
the Old Vine Zinfandel and many Gold and Silver medals at other
competitions.
The tasting room is inspired by ancient Italian villas that cover
the landscape in Italy. Here, friends and family gather to share the
