Organizational Background: The Southern Illinois University community nutrition class is aiming towards a healthy future of young children in Southern Illinois. We have a firm belief that all children should consume five servings of fruits and vegetables a day because this is beneficial to optimizing the health of our children, while preventing heart disease and some cancers. We are nutrition students bringing this program to Southern Illinois to further the education of parents and children in the area. We plan to use this program in the schools of Southern Illinois to promote eating five a day with the help of parents. We will also hire one dietitian to disperse the information over the three schools we have chosen to work with. Community Need We at Southern Illinois University are very committed to providing healthy nutrition education to those of our young generation. Our coordinators and Dietitian will be in full charge of putting on every detail of the program. Thirty four percent of Carbondale is living in poverty. These families do not have the access or knowledge to get the correct food choices to ensure the proper health of their children. There are many alternatives to educate these people on to let them know where to get these food items. Because of the high poverty rate 1,380 children are in danger of not getting enough nutrients, as well as being at risk of developing chronic diseases in their future. The children and their parents need this program to allow them the materials to be healthy. Obesity in children has now reached 15.21% and this program is going to be beneficial for parents and children to bring this number down. By preventing and treating the furthering of childhood obesity we can

prevent obesity later in life, as well as the following health related problems: Type 2 Diabetes, cardiovascular disease, Asthma, Hepatic statuses, and sleep apnea. We submit this grant to you to put the children first and allow this successful program to come to Southern Illinois to improve the health of our young children. Goals and Objectives The goals and objectives for our program include the following: 1. To increase parents awareness of the benefits of consuming the recommended amount of fruits and vegetables daily. 2. To increase the fruit and vegetable intake by +1-2 per day for the school aged children by the end of the first month. 3. To educate the parents on how to shop for fruits and vegetables and stay within their budgets. Program Description Adults in America do not eat adequate amounts of fruits and vegetables daily, and with that children eat even less. With the 5-A-Day campaign our goal is to increase parents awareness of fruit and vegetable consumption and the benefits of eating 5-A-day. With combined nutrition education for children and their parents the goal of our program is to increase the consumption of fruits and vegetables among school aged children in the Southern Illinois area. We will be working with one school per month and focusing on the following schools: Parrish elementary, Thomas School and Lewis School. We will focus on one school per month beginning each month with an assessment of where the students and parents are at with their fruit and vegetable intake through the use of a food frequency questionnaire that we will send home with the students. From this questionnaire we will have our hired dietitian interpret the data to see where the parents

and children are at in terms of consuming fruits and vegetables. Following the interpretation of this we will conduct a nutrition education class for the students and their parents to educate them on different fruits and vegetables, ways to incorporate them into their diet at different snack and meal times. We understand that 34% of Carbondale is living in poverty so we will also be educating the parents on how to shop for their budget by purchasing fruits and vegetables that are in season, how to fit the time to shop for fruits in vegetables into busy schedules by educating parents on how to purchase fresh fruits and vegetables that will last, canned fruits and vegetables without added sugars or salt, and frozen fruits and vegetables that can be kept for longer periods of time and used fast or on the go. At the end of the month we will conduct a lunch time observation as well as another food frequency questionnaire for the students and parents. The parents will also work with the students to conduct a 24-hour recall to be returned to the school for the dietitian to analyze and see if the consumption has increased. For bringing back the questionnaire students and parents are entered to win a $50 Kroger gift card. At the end of the program we will also be helping the school start up a garden for the schools to maintain so fresh fruits and vegetables are at access for the school to incorporate into meal times. At the end of the program the coordinators, volunteers, and school staff will maintain the garden with help of the students. The students will get to help grow all the vegetables that they will be eating. We plan to donate $10,000 per school to maintain the gardens once the program is over because they may not have money in their budget at first to maintain. We hope that with us starting up the garden and donating the money to

maintain it will ensure that they can keep the garden going after we leave. We hope that this ensures a unique experience for all of the students at each of the schools. The goal of our program is to increase the amount of fruits and vegetable intake by +1-2 per day for the school aged children with the end result to have this number increase over time to the daily recommendation of 5 servings of fruits and vegetables a day. We are making it a mission to work towards the five a day quota through increasing consumption by +1-2 per day per week. We know that increasing this number will take time and it will not be able to be done overnight. Methods: Parents and students will take a survey based on fruit and vegetable consumption before parents and students attend the 5-a-day program. The purpose of the survey is to know how much fruits and vegetables children in the Carbondale school district are consuming. This will help us understand where needs are and are not met as well as tell us if there are any variances in consumption among the age groups. This survey will be done before the class and one month after the class. The survey done at the end of the class will see if the consumption of fruits and vegetables has increased after attending our program. Our goal is to increase by +1-2 servings per day per child. We established our goal for this number so the children and parents could slowly increase their consumption of fruits and vegetables because we know that consuming five servings per day will not happen overnight. Food choices and food changes will also be discussed with the school administration and cafeteria director and their staff. Discussing food choices will help us better understand

what choices the children have at school and if they are chosen. If we want this program to work, we have to make sure the children have options to choose fruits and vegetables to add to their meals, and we want to make sure these are not things that are filled with sugar such as sugary fruit juice. This can shed light on problem areas such as presentation or the food choices given. After the class we will discuss if any apparent food choices have changed among the students and also if there are any changes the cafeteria can make. Such as offering fresh fruit cups, or a salad bar, have more options for steamed vegetables and offering only baked meats, not fried. Lunch observations will also be conducted to confirm food choices of the students and we will also be able to observe food portions and consumption. A parental survey will also be sent home with students and asked to be returned. The incentive will be that their name will be entered in a drawing for a prize. We are going to offer twelve $50 Kroger gift cards as the prizes. By offering the Kroger gift cards, it will give the winners a larger budget to purchase the fruits and vegetables. The survey to the parents will examine fruit and vegetable consumption of the guardians and their children. This survey will ask questions such as where their fruits and vegetables are purchased and forms of preparation. The survey will also include a 24-hour food recall. This survey will show us fruit and vegetable consumption at home and if foods are purchased locally or at the commercial grocery store and how they are prepared. This will allow us to make suggestions of how to meet 5-a-day at home as well as school.

The budget we have set up for our program allows all three schools to get on track to increase their fruits and vegetable intake. This budget allows all three schools to get the education given by a local Registered Dietitian and four workers from Southern Illinois University HND 480 course. We will also have high school volunteers receiving community service. They will set up and break down the tables and posters. They will also help the other workers hand out flyers on increasing their fruits and vegetable intake. We also are providing all three schools with the materials to make a garden. The schools will be allowed to have the students to be involved in planting and taking care of the garden throughout the school year. The other incentives we are going to offer the students, families and staff are prizes that include cooking books, cooking utensils, t-shirts, jump ropes, sports balls, gardening tools, sidewalk chalk and CDs with music to get children up an active.
