Toss the cabbage, red bell pepper, green onions, pineapple and coconut together. Whisk the blood orange vinegar, salt and honey together and pour over the slaw mixture. Add the mayonnaise and add a generous grind or six of black pepper. Stir until combined. Add salt and pepper to taste.
