Afterthoughts
Introduction
It’s time to get out those forks, start twirling and celebrate National Linguine Day on September 15th!
Do you know why there is such a variety of pasta shapes? It’s because the pasta’s size, weight, shape, and texture all contribute to the way in which it can hold the sauce.
For instance, long, flat strings of pasta are ideal with creamy sauces, while tubular, short pasta tends to work better with thicker and chunkier sauces.
Linguine is long and flat and compliments a wide range of meats, poultry, fish, seafood, and veggies including:
Spicy Turkey and Blue Cheese Linguine
Spanish Chorizo and Tomato Linguine
Garlic Salmon Linguine
Sicilian-Style Mahi-Mahi Linguine
Creamy Cajun Linguine
This versatile pasta pairs perfectly with so many different foods, it’s hard to choose just one linguine recipe to create. We think every day should be National Linguine Day!
Meat-Free
Creamy Cajun Linguine
Has your linguine got the blues? This Cajun seasoning will give this pasta dish lots of spice. It has a subtle heat and can jazz-up lots of different recipes.
Servings: 2
Total Time: 25mins
Ingredients:
5 ounces linguine
2 tbsp butter
1 tbsp shallot (minced)
1 tbsp garlic (peeled, minced)
1 tbsp Cajun seasoning
¼ cup white wine
1 tbsp fresh lemon juice
⅓ cup heavy cream
⅓ cup half and half
¼ cup Parmesan (freshly grated)
Freshly cracked black pepper
Chives (chopped, to garnish)
Directions:
1. Cook the pasta in boiling salted water until al dente. Drain.
2. In the meantime, prepare the sauce. Over moderate heat, in a pan, melt the butter. Add the shallot along with the garlic, and Cajun seasoning and stir for 60 seconds.
3. Pour in the white wine, and while occasionally stirring, cook for between 3-4 minutes.
4. Add the fresh lemon juice, stirring a couple of times, for 60 seconds.
5. Gradually add the heavy cream followed by the half and half, stirring slowly to combine. Cook for approximately 4-5 minutes, occasionally stirring.
6. Reduce the heat to low and continue to cook for 1-2 minutes until thickened.
7. Take the pan off the heat.
8. Add the grated Parmesan and stir to incorporate. Season with pepper, to taste.
9. Finally, stir in the cooked linguine, and toss to coat evenly.
10. Garnish with chives and serve.
Greek-Style Linguine
It's time to go Greek, with this mushroom, olive, and feta pasta dish. You’ll also have plenty of homemade Greek seasoning leftover to add Mediterranean flavor to future meals.
