It is important to eat salad in as many colors as it is possible because the nutrients and vitamins depend on the vegetables’ and fruits’ colors too.

Ingredients
Dijon Vinaigrette
a quarter cup rice wine vinegar
two tablespoons Dijon mustard
one large clove garlic, minced
big pinch of salt
black pepper, to taste
one cup extra-virgin olive oil

two medium zucchini thinly sliced lengthwise
one medium yellow pepper, halved lengthwise, seeded
two tablespoons olive oil
