    SALSA TURKEY VEGGIE CUPS

    6 slices (2-ounces in total) ultra-thin turkey breast 

    1 cup liquid egg whites

    2 tablespoons low-sugar low-fat salsa

    2 tablespoons low fat shredded Colby-Jack cheese

    1/3 cup chopped mushroom

    1/3 cup chopped bell pepper

    Salt and pepper to taste

    Fat-free cooking spray

    Preheat the oven to 400 °F. Apply cooking spray to muffin tray

    Line the turkey on the muffin. Spread half of the salsa on the inside of the meat. Add mushrooms and bell peppers to the cup

    In a measuring cup, mix egg white, the remaining salsa, salt and pepper. Pour evenly to the 4 cups. Add cheese on top.

    Bake for 15-20 minutes until firm.

    1 (4-ounce) boneless skinless chicken breast, cooked and shredded

    1 1/4 cups liquid egg white

    1/2 cup frozen cauliflower, thawed and chopped

    1/2 cup frozen broccoli, thawed and chopped

    1/2 medium onion, chopped

    1/2 cup chopped mushrooms

    1/3 cup low-fat grated Swiss Cheese

    1/4 teaspoon salt

    1/4 teaspoon ground black pepper

    Fat-free cooking spray
