    CHAPTER 1: CARIBBEAN TOOLS & UTENSILS

    While preparing and cooking your Caribbean meals; you may want the assistance of correct utensils. The table below lists the utensils that will greatly help achieve the Caribbean dishes that you desire.

    CHAPTER 2: CARIBBEAN RECIPES

    RECIPE 1. ROAST BEEF

    Beef that looks this divine is impossible to stay away from.

    Total Time needed: 1 hour

    Serves: 10

    INGREDIENTS:

    Beef loin (3lbs., boneless)

    Leeks (2 Cups, chopped)

    Olive oil (1 tsp.)

    Sage (½ tsp.)

    Dry mustard (½ tsp.)

    Paprika (2 tsp.)

    Salt (½ tsp.)

    Thyme (½ tsp)

    Pepper (1 tsp.)

    Onion (1, minced)

    Water (2 Cups)

    Chicken broth (2 cups)

    Garlic clove (1, minced)

    DIRECTIONS:

    Add your oil to the bottom of your cooker and allow to heat on a high flame. Add your beef roast to the heated oil and allow to brown evenly on all sides. Once thoroughly cooked, set it aside and allow to cool.

    Add your garlic, onion, and leeks and cook for about 5 minutes or until soft.

    Pour in your broth and water and allow to heat. While heating in a clean bowl, create a spice mixture by mixing the mustard, sage, pepper, thyme, and paprika.

    Using the spice mix created in the previous step, rub the roast thoroughly then place the roast in the heated liquid in your cooker. Securely close the lid and allow the cooker to rise to high pressure. Once at high pressure cook the roast for another 45 minutes.

    Cool the pressure cooker, release the lid when cooled, and serve.

    RECIPE 2. CURRIED GOAT & BUTTER BEANS

    Curried goat is good on its own but to add butter beans is madness.

    Total Time Needed: 1¼ hours

    Serves: 4

    INGREDIENTS:

    Goat (1lb., chopped)

    Onion (1, large, chopped)

    Green onion (thinly sliced)

    Garlic (2 cloves)

    Ginger root (1 tsp, fresh)

    Scotch Bonnet pepper (1, chopped)

    Curry powder (6 tbsp.)

    Salt (1/2 tsp.)

    Black pepper (1 tsp.)

    Vegetable oil (2 Tbsp.)

    Water (1½ Cups)

    Butter beans (1 Cup, canned, drained)

    Cornstarch (1 Tbsp.)

    Water (2 Tbsp.)

    DIRECTIONS:

    In a large mixing bowl, combine your green onion, pepper, onion, garlic, thyme, ginger, salt, and chopped goat. Toss and massage into the goat. In a large skillet heat your vegetable oil and half your curry and once hot, add the goat and allow to color on all sides. (Should take about 5–7 minutes).

    Pour the goat and the water into a pressure cooker. Securely close
