    Introduction

    For hundreds of years two of the most popular sweet treats known to man were some form of cookies and candy. In modern times, many desserts have derived from these two concoctions, most of which use the same or similar ingredients.

    In America today, a cookie is usually some form of a thin and sweet cake, usually eaten with the hand and is either crispy or soft. Culinary history says that cookies were discovered accidentally when bakers of early days made little cakes to test a particular recipe they had developed or the temperature of their oven.

    As early as the 7th Century A.D. Persia (now Iran) began to cultivate sugar. By the end of the 14th Century the use of sugar had spread into the streets of sophisticated Paris where small filled wafers were sold on the streets by vendors. Moving forward to the 19th Century, technology brought more diversity to the world of desserts as more recipes for cookies found their way
