    Introduction

    I hope that you’ve been wanting to learn about cooking meals and snacks for yourself and your family while enjoying the many medicinal properties that herbs have to offer. Because that’s what this book is about. I started studying herbalism right around the same time I became interested in herbal nutrition, about sixteen years ago as of this writing.

    I have come to understand that food and medicine are intricately related and that the line between health and diet is really not a line at all. What you eat, what you put into your body three to five times a day, actually represents your best chance at positively affecting your health. By bringing a focus to the medicinal and nutritive herbs in our diets we are maximizing our chances of long term wellness.

    Mango Cilantro Salad

    Salads should not be something you HAVE to eat; they should be a work of art and sumptuous. How the heck else are we going to want to eat one every day, which everybody knows we should be doing? This recipe will help ease salads into your daily routine, because it makes for a spectacular visual (beautiful food = good), is super yummy and has a high level of nutrition with medicinal actions helping you on the side.

    Ingredients:

    2 teaspoons balsamic vinegar

    2 teaspoons fresh lime juice

    1 teaspoon maple syrup

    3 Tablespoons olive oil

    1 large Mango, peeled and chopped

    1 medium cucumber, peeled and chopped

    ½ red onion, chopped finely

    1/3 cup fresh cilantro chopped

    Dash of salt

    Directions:

    Whisk together first 4 ingredients (the dressing) until emulsified,
