    Drumstick Curry

    Ingredients

    • 3 to 4 drumsticks

    • 1 medium sized chopped onions

    • 2 tbsp. oil

    • 1 tbsp. coriander seeds

    • ½ tsp cumin

    • ½ cup desiccated coconut

    • 4 to 5 black peppercorns

    • ¼ tsp turmeric powder

    • 2 to 3 dry red chilies

    • ½ tsp tamarind paste

    • coriander leaves for garnish (optional)

    • salt to taste

    Steps

    1. Rinse, peel and chop the drumsticks to 3 to 4 inches’ pieces.

    2. Take a blender jar and put all the ingredients in spices list in the jar. Add little water to it.

    3. Grind them to a smooth paste.

    4. Take a pan and add 2 tbsp. oil in it.

    5. Heat the oil well and add 2 1/2 tbsp. chopped onions

    6. Sauté the onion till they become translucent.

    7. Now add the ground masala paste to the sautéed onions

    8. Keep stirring often and continue to sauté for 3 to 4 minutes.

    9. Now add drumsticks to the above mixture.

    10. Add 1 cup water or as per consistency required.

    11. Add salt to taste.

    12. Let the curry simmer on low flame, until drumsticks become soft.

    13. Drumstick curry is ready.

    14. Serve with hot steam rice.

    Ingredients

    Stuffed Eggplant Curry

    • 1 large onion finely chopped

    • 1 tbsp. ginger-garlic paste

    • 1 tsp mustard seeds

    • ½ tbsp. tamarind paste

    • 250 gms small eggplant

    • ½ tsp whole black gram

    • ½ tsp cumin seeds

    • 5 curry leaves

    • 2 tbsp. oil

    • salt as per taste

    • chopped coriander leaves for garnish

    • ¼ cup peanuts

    • 2 tbsp. desiccated coconut

    • 1 tbsp. coriander seeds

    • ½ tsp cumin seeds

    • ¼ tsp fenugreek seeds

    • 3 dry red chilies

    • ½ tsp turmeric
