    In this cookbook ebook, I give Dinners that complement each other, in taste, color and texture. Keep in mind portion control for healthy lifestyles. Always try to include healthy, crispy, crunchy salads to fill your stomach so you don’t overeat dinners. Include fiber-rich vegetables as often as you can.

    Remember: Fiber-rich foods and Leafy Greens Eat Fat!

    Throughout the recipes, you’ll see the following and here is what I mean:

    BOT means my staples, Basil-Oregano-Thyme

    Flavored Olive Oil-I’ve developed flavored Oils to help diabetics and so on.

    Rosemary Olive Oil, Red Pepper Olive Oil then plain Olive Oil. All oils are Extra Virgin!

    and flavored Vegetable Oils- Garlic, Peppercorn, plain.

    Flavored Peppers: I’ve developed a line of Flavored Peppers, since salt is off-limits to Diabetics, Heart Disease patients, those with organ failure/transplant and anyone wanting a healthier lifestyle.     Without further ado, here are the Dinners!

    Leftover steak, Roasted Mediterranean Baby Eggplant and Roma Tomato; Celery and Squash Salad

    3 oz leftover steak

    Roasted Baby Eggplant and Roma Tomatoes

    6-8 baby eggplant

    4-6 roma tomatoes

    4 tbsp Rosemary Olive Oil

    1-2 tsp each Tarragon, Red Rosemary Pepper, Parmesan

    Wash and halve baby eggplant, removing stem. Top, core and quarter roma tomatoes, placing all in 8x10 baking dish. Drizzle with oil and spices.

    Bake at 400 for 20 minutes.

    Celery and Squash Salad

    4-6 stalks Celery

    1 medium zucchini, 1 medium yellow squash

    Rosemary Olive Oil, Tarragon, Red Lemon Pepper, Parmesan

    Slice celery on a bias, slice squashes lengthwise in half,
