    If You Can Read, You Can Cook - Loren Smith

    Ingredients:

    fresh green beans

    cauliflower

    tomatoes

    green onion

    radishes

    cucumbers

    Directions:

    Cook green beans; add cut up raw vegetables. Marinate in Good Seasons Classic Herb or other Italian dressing. Add cucumbers just before serving.

    This is Shirley’s recipe. Shirley is Jane’s sister. She is a wonderful person, and a tireless volunteer.

    BEEF STROGANOFF

    Ingredients:

    2 lbs lean tenderloin steak or venison cut into bite sized chunks

    1 large white onion chopped

    1 extra large can of mushroom soup

    1 lb sliced mushrooms

    3 toes (chortle, chortle) garlic

    1 cup of beef broth

    salt and pepper to taste

    1 tsp paprika

    2 tbs olive oil

    1/8 stick of butter

    1 lb whole wheat fettuccini pasta

    1 lb washed and trimmed green beans

    Directions:

    Fill a large pasta cooker about half full of water, add a pinch of salt and turn the burner on high. Put the green beans in a pan with about an inch of water and put it on the stove. Put your colander in the sink. In a large cooking pot add two tablespoons of e v olive oil. Turn the heat to medium. Add the onion and mushrooms and 3 (amputated, haha) diced toes of garlic. Sauté (do not overcook) Add the beef and let brown (2-3 mins.) drain and return to cooking pot. Stir in the mushroom soup and beef broth and put the cover on, tilted. Let simmer on for 12 mins. Turn the heat to low. Uncork a bottle of your favorite red wine, pour yourself a glass, look at the wine in the glass and then take a good sip. Say, Ahhh, to the good life! Pour the remainder of the glass of wine into the stroganoff and stir. Put the cover on again, tilted. Now put the fettuccini into the boiling pot of water. When it is done drain it into the colander. Turn the burner on medium-high under the green beans. Now put the butter on the pasta. This will keep the pasta from sticking. Use tongs to remove the beans from the pan and put them into a serving bowl on the table. Transfer the pasta into a large glass bowl and put on table. * Hint drizzle a little olive oil onto the cooked pasta. Use tongs to lift the pasta a couple of times for to get a little oil on the pasta, and for dramatic effect. Put the stroganoff in a serving bowl and set it on the table. Ladle the stroganoff over the pasta. A piece of warm bread, that your guest brings, is great to push the stroganoff on to your fork and to sop up the sauce with. Mmmm. Fill your glass again. Enjoy!
