Introduction
Burgers and kebabs are the mainstay of BBQ and grill cooking. The only problem is that it can get a little boring, if all you do is go to the supermarket and grab some value burgers. With just a little effort before your BBQ you can produce some exciting burgers and kebabs that you have produced yourself. By making your own burgers and kebabs you can also be a little more certain as to what they actually contain. This book contains a wealth of recipes that will allow you to produce some really interesting burgers and kebabs, whether you are entertaining with the BBQ or just grilling up something for your evening meal. Different countries across the world have developed their own take on burgers and kebabs and as a result this book contains recipes from Brazilian style burgers to Bulgarian style kebabs.

Burgers
Burgers throughout the world tend to reflect the local ingredients and local tastes. As a result it no surprise that Greek burgers tend to include feta cheese and Italian burgers have fresh basil. Most of the recipes here use ground beef, but in some areas of the world beef isn’t the normal meat that is served and as a result you will get burgers based on other meats such as ground lamb. It is well worth experimenting with other meats such as lamb as the results can introduce very different flavours. With lamb you often end up with burgers that are more like the kofte kebabs or meat balls served in Turkey. For a healthier burger you can try to use meats such as ground chicken and turkey. Again the flavours are quite different and you may need to adjust seasonings to reflect this.

Easy Burger Recipe
Ingredients
1 egg
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 pound ground beef
1/2 cup fine dry bread crumbs
Method
Whisk the egg, salt and pepper together in a mixing bowl. Put the ground beef and breadcrumbs into the bowl and mix together with the beaten egg using your hands. Once everything is well blended shape it into 4 burger patties that are about 3/4 of an inch in thickness.
Preheat the grill or BBQ and then place the burgers onto the grid and grill them for about 15 minutes turning once for even cooking. Once the burgers are browned to your liking serve them on buns with your favourite condiment.

1 large brown onion
2 garlic cloves
1 tbsp Worcestershire sauce
2 tsp Tabasco sauce
1/4 cup chopped fresh parsley
