A very wintry welcome to you! At this time of year, I think we all need a bit of warming comfort food and a hug in the form of a bake is my favourite kind, so I hope you’ll enjoy my recipes in this issue of Baking Heaven as much as I do.

I’m a huge carb fiend I must confess, I love pasta, particularly lasagne, and this has inspired my Pasta Pie. Baked in a cake tin, it looks really cool in the double layered rigatoni and I find it fun to make, loading up all the circles of pasta, stuffing them with the sauce and adding lots of cheese! You can make it meaty or veggie, just substitute the protein in the sauce. I like using Quorn or soy mince, beef works well of course, and if you don’t like using meat substitues you can up the mushroom and veg or add puy lentils instead.
