CHICKPEA, BROCCOLI AND BACON SALAD
An easy one to make ahead – it’s great for packed lunches and lazy summer picnics.
PER SERVING
341 cals; 18g fat; 4g sat fat; 21g carbs
SERVES 4
✣ 60g (2oz) lean bacon rashers
✣ 250g (9oz) Tenderstem broccoli
✣ 3tbsp olive oil
✣ 2tbsp sherry vinegar
✣ 1 x 400g can chickpeas, drained
✣ 1 x 285g jar roasted red peppers, drained and sliced
✣ Large handful rocket leaves
1 Grill the bacon for a few mins, turning occasionally until crispy, then soak up any excess fat using kitchen paper.
