Serves 4 Takes 40 mins + resting

1.2kg tomahawk beef steak
30ml black or mixed peppercorns
10ml sea salt flakes olive or avocado oil, for cooking
50g butter
2 red onions, cut into wedges

60g butter
2 shallots, finely chopped
250ml red wine
250ml beef stock small handful thyme
125ml cream
5ml green peppercorns (optional)
