Lemon grass beef banh mi

» MAKES 4

» PREPARATION 35 MINUTES

¼ cup (75g) whole-egg mayonnaise
3 tsp sriracha or other chilli sauce (optional)
2 half baguettes, ends trimmed, halved crossways
2 baby cucumbers (qukes), cut into batons
1 carrot, julienned
1 spring onion, cut into 5cm lengths
8 large fresh coriander sprigs

LEMON GRASS BEEF

300g beef porterhouse or rump steak, fat trimmed, sliced thinly on the diagonal

1 tbsp fish sauce
1 stalk fresh lemon grass, white part only, chopped finely
1 clove garlic, crushed
1 tbsp vegetable oil
1 red shallot, halved, sliced thinly
2 tsp white sugar

1 Make the lemon grass beef.
