TOFU AND LENTIL THAI RED CURRY

Serves 4 EASY 1 hr 10 mins

Heat a glug of olive oil in a large pot (with a lid for later use) over high heat. Add (find at , and fry until soft and translucent. Add and , and fry, while mixing to combine, for about 1 minute. Add , cover with the lid and reduce the heat to medium-low. Cook for 1 hour, stirring occasionally to prevent the lentils from sticking to the bottom of the pot, until the lentils are soft. Add the browned tofu 5 minutes before the end of the cooking time. Remove from heat and stir in . Serve with cooked jasmine rice, garnished with fresh coriander leaves.
