Keep it simple...

30-MINUTE GREEN CHICKEN CHILLI

This recipe is in no way meant to replicate a traditional chilli verde but it is pretty good, if I do say so myself! The green chillies used here can range in heat level, so buy whatever is best for your palate.

SERVES 2

2tbsp olive oil
1 medium yellow onion, diced
2 jalapeño chillies, 1
seeded and diced, 1 sliced for sprinkling
2 green chillies, seeded and diced
1 tin tomatillos, drained, or
6 fresh husked or 6 fresh
green tomatoes, roughly
chopped
Salt and freshly ground
black pepper
2 garlic cloves, grated or
minced
1tbsp ground cumin
1tbsp dried oregano
450g skinless, boneless chicken thighs
500ml low-salt chicken stock
125g tin mild or hot chopped green chillies
2 limes, juice one and slice
