• 16 oz Barramundi, skin-on (4 x 4oz portions)• 2 oz Sugar• 1 ea Watermelon Radish, peeled and julienne• 1 oz Pea Shoots• 2 Tbsp MCT Oil• 1 Tbsp Grapeseed Oil• Salt + Pepper to taste
